Good 36º cloudy/foggy morning.
 
 
The rain yesterday was just on and off and light until about 3pm when it POURED!!!! We got just about 1/2 " total.  Stayed super gloomy. Late afternoon the wind was wild! 
 
I thought it weird when the outdoor temp was 46º it was 66º inside and when it was 47º outside it was 67º inside and then when it was 49º outside it was 69º inside! Finally it was 49º and 70º inside!!
 
When it was pouring so hard Bruiser wanted to go out. When I looked to see where he was, he was sitting on my stationary bike!

The golden toad (Incilius periglenes, formerly Bufo periglenes) was a small true toad that was once abundant in a small, high-altitude region about 4 square kilometres (1.5 sq mi) in an area north of the city of Monteverde, Costa Rica. It was endemic to elfin cloud forest. Also called the Monte Verde toad, Alajuela toad and orange toad, it is commonly considered the "poster child" for the amphibian decline crisis. This toad was first described in 1966 by herpetologist Jay Savage. The last sighting of a single male golden toad was on 15 May 1989, and it has since been classified as extinct by the International Union for Conservation of Nature (IUCN).
 
 
Bacon Ranch Pasta Salad 

 

1 (15-ounce) bag cheese-filled tortellini pasta
16 ounces grape tomatoes, halved
2 bell peppers (1 orange and 1 yellow), cut into bite-size pieces
1 English cucumber, cut into spears and then sliced
1/2 medium red onion, rough dice
1 (4.25-ounce) can sliced black olives
4 ounces sharp cheddar cheese, cubed
1 cup bacon crumbles (1 pound cooked, cooled and crumbled)
 
 
Easy Ranch Dressing
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup milk
3 T. dry ranch salad dressing mix
2 T. fresh lemon juice
2 cloves garlic, minced (or 1 t. garlic paste)
1 t. course ground black pepper
  1. Bring a large pot of water to a boil. Cook tortellini according to directions on the package (do not add salt to the water). Drain and set aside.
  2. Meanwhile, prepare the salad dressing: In a medium bowl whisk together mayonnaise, sour cream, and milk. Add remaining dressing ingredients. Place in refrigerator until ready to dress the salad.
  3. Combine tortellini 1/2 of salad dressing and toss to combine.
  4. Add remaining salad ingredients in a large bowl, toss until combined. Reserve the remaining dressing.  Refrigerate until ready to serve.
  5. When ready to serve, pour the dressing over the salad and gently toss with salad tongs until well coated.
 
 ***This salad is excellent the next day.  When making ahead, use 1/2 of the dressing when preparing the salad and reserve the remaining dressing to pour over the salad before you serve it.

Later I watched our local public television channel as my grandson Tucker was on the Brain Bowl! His team, Grants Pass North,  was against, Fleming School in Merlin.  
Unfortunately Tucker's team lost but by a very close margin. Tucker contributed awesome to all the questions. Very proud of him!!!

National Eggs Benedict Day is observed annually on April 16.   It is a day set aside to enjoy poached eggs with Hollandaise sauce and Canadian bacon or ham on English muffin halves.
There are two different stories as to how Eggs Benedict came to be.
  • In 1894 stock broker Lemuel Benedict ordered “buttered toast, poached eggs, crisp bacon, and a side of Hollandaise”  at the Waldorf Hotel.  They were so impressed with the dish that they put it on the menu substituting ham and English muffins in place of the bacon and toast.
  • In the early 18th century, Pope Benedict XIII liked an egg dish so much that he requested it time and time again.  It is also believed that Pope Benedict XIII had an illness which added to his desire for this particular egg dish, hence the name Eggs Benedict.
