Peace Officer's Memorial Day ~ Baked Chicken Fettuccine Alfredo ~ Amish Butter

Good 48º cloudy morning.
The predicted rain for yesterday never appeared. But, they got quite a rain storm in So. Cal!!! So today.... radar is heading south and east....

Today is Peace Officer's Memorial Day
God Bless them all for the job they do and for the lack of respect they get from so many government officials! (Clintoon's and OVamit's to name a few!!!!!)

Yesterday I pulled some weeds and the back started screamin' so I came in and cleaned out a kitchen cupboard. Got rid of stuff that had been in there wayyyyy too long. Also, since I don't use coffee beans anymore I found the perfect person to give them to... Leah! I gave her my bean grinder a couple months ago.

Historically this date...
1905 – Las Vegas, Nevada, is founded when 110 acres (0.45 km), in what later would become downtown, are auctioned off.

1928 – Mickey Mouse premiered in his first cartoon, Plane Crazy

1940 – McDonald's opens its first restaurant in San Bernardino, California.

1969 – People's Park: California Governor Ronald Reagan has an impromptu student park owned by University of California at Berkeley fenced off from student anti-war protestors, sparking a riot called Bloody Thursday.

1970 – President Richard Nixon appoints Anna Mae Hays and Elizabeth P. Hoisington the first female United States Army Generals.

2010 – Jessica Watson becomes the youngest person to sail, non-stop and unassisted around the world solo.
... just amazing at 16 years of age!

And births this date include...
1895 – Prescott Bush, American banker, politician and member of the Bush family (d. 1972) (GHW's dad)

1936 – Anna Maria Alberghetti, Italian-born actress

1937 – Trini López, American musician

1941 – K. T. Oslin, American musician

1955 – Lee Horsley, American actor
This is a quick and easy casserole dinner...
Baked Chicken Fettuccine Alfredo
Baked Chicken Fettuccine Alfredo
24 oz fettuccine pasta
2 T olive oil
2# uncooked chicken breast cut into chunks
1 bag frozen peas (or if you don't like peas, use green beans... or whatever!)
2 (16 oz) jars Alfredo sauce
2 c mozzarella cheese, shredded
salt and pepper
Preheat oven to 350º. Cook pasta. Drain and return to pot. In skillet heat olive oil, add chicken, season with salt and pepper. Cook 7-8 minutes until chicken is no longer pink in center. Add chicken to pasta, add peas, mix with remaining ingredients. Pour into ungreased 13x9 baking dish. Spread evenly  and bake 18-20 minutes until cheese has melted.
(For me, I cut this recipe in half and use a 9x9 pan.)

The butter PJ brought over that Patty gave me is Amish Roll Butter. It's made in Wisconsin by Alcan Creamery
It's good and tastes 'lighter' than regular butter....

Patty got it at Food 4 Less, but I saw where Albertson's (Haggan) is selling it and also Amazon.

I hate it that my favorite TV shows are going on summer hiatus (Chicago Fire, Chicago PD, Blue Bloods)... Now it's reruns and reruns. Boring..................... Hope there are some good Hallmark movies. Tried to watch one last night... 'They Way You Are' with Candace Cameron (sister of Kirk). BORRRRRING...................................... Turned it off after the first 15 minutes. Watched Cops.
All I know. Nuff said. Happy TGIF. Ciao.

Peace Officer's Memorial Day

Police Officer's Memorial Day honors and remembers police officers who gave their lives while on duty.
Police officers protect us 24/7 every day of the year. It's a sometimes dangerous job. They know they are putting their lives at risk to make and keep us safe. Police officers know the risks, and accept them. Sometimes, they pay the ultimate price.
Please show our respect and appreciation for police officers everyday.
Ways to participate in this day:
  • Show appreciation for police officers.
  • Make a donation to a police officer fund or memorial
  • Participate in activities honoring officers who have died on duty.
  •  Better still, create a memorial event, if there isn't one in your area.
  • Thank your police officers for a job well done.

Origin of Police Officer's Memorial Day:
Police Officer's Memorial Day was created and established as May 15th by an Act of Congress.
