Clear Sky ~ Geese ~ Bacon Pickle Fries ~ Corned Beef Dinner


Good 29º icy clear sky morning....
 
       
Yesterday we had sun for a couple hours and the rest of the day was cloudy and gloomy and we warmed to 50º. 

 
When I left here on Saturday heading to Taprock, "my geese" were walking down my driveway and not worried about my truck, just taking their time. I think they knew it was me, as at times when I am driving up or down the driveway and they are close by I open the window and talk to them. I always call them "goosie goose" and they know it's me, the cracked corn lady!
 
 
 
 
Bacon Pickle Fries

Take halved or quartered pickles and wrap each on in bacon. Place on a tray and bake at 425º 15 minutes. 



  1. For the dipping sauce, in a food processor, combine sour cream, buttermilk, avocado, garlic, and lime juice.
  2. 1/3 c. sour cream
    1/4 c. buttermilk
    1/2 avocado, diced
    1 tsp. garlic clove, chopped
    Juice of 1 lime
    kosher salt
  3. Season with salt and pepper and pulse until smooth.

Later the corned beef I cooked in the crockpot with the Guinness beer and colcannon was dinner. Super good! Cooked the beef on low for 9 hours. Perfectly tender!
