Good 33º dark gloomy morning. Some sprinkles of snow in the night and more coming down now. Barn roof covered (probably the house too), with snow on the fence railings, and a bit in the grass.

Rain/Snow "likely" today 40%-60% and tonight 100% rain and rain/snow 90% according to the predictions. 
Yesterday was just plain cold. When I get dressed I put my clothes in the clothes dryer, wait a few, and then dress right there, taking out one piece of clothing at  a time. Ahhhhhhh..... those warm clothes feel so GOOD!!!
By afternoon we had some on and off sun and warmed to 50º.

Bruiser and Dude both enjoyed the sun....



My neighbor Frank called me to say there was a car left down on the road blocking part of our driveway. It was an old car and not locked. I told Frank maybe we should just push it into the ditch! Apparently the neighbor down by the road had called the Sheriff's Department. My Schwans order was to be delivered about 11:30, so I was hoping the car would be moved by then. But, apparently when Leon came by at 1:30, the car was gone so I got my order!

Why does a golf ball have dimples?

When Cory from All Natural was here Monday he asked me if I only had Tom turkeys here. I said the flock of Toms was 11

and I didn't understand why we hadn't seen any hens yet, as it's mating season!

Well a few hours later there was turkey "commotion" outside and I looked and there were 17 hens!!! OMGOSH. Did they know we were talking about them? LOL!

A couple days ago I had read about a dog flu that had affected a dog in Grants Pass. Apparently the dog came from Reno where it contacted this flu. The flu is deadly. Now everyone in Grants Pass, and or Rogue River who walk their dogs out among other dogs or board them are getting the flu shot. It will have to be given 6 weeks before boarding or having them among other dogs. Check out the second link for the symptoms... #1 is coughing.

Shrimp Scampi

Cook and prep time 20 min. Servings 4
Succulent sauteéd shrimp in a buttery lemon white wine sauce that is quick and easy to make!
Ingredients:
8 oz linguine
1 T olive oil
2 T butter
1 pound jumbo shrimp (16-24) shelled and deveined
4 cloves garlic, chopped
1 pinch of red pepper flakes (optional)
1/4 cup white wine
1/4 cup lemon juice (1 lemon)
salt and pepper to taste
1 t lemon zest
1 T parsley, chopped
1. Cook pasta as directed on package
2. Meanwhile heat oil in skillet and melt butter over medium-high heat until frothing. Add the shrimp and cook for 2 minutes, flip and add garlic and red pepper flakes. Cook for 1 more minute before transferring to large bowl.
3. Add the white wine and lemon juice to the pan to deglaze it. 

Simmer for 1 minute. Remove from heat and add salt and pepper and stir in the lemon zest and parsley before tossing with shrimp and pasta.
Mike came over in the afternoon and worked on fixing my foot bridge out back and the gate in the front yard and then he worked on fixing the riding lawnmower. He'll be back in a day or two to finish.

A delightfully delicious dessert is observed each year on February 28th as it is National Chocolate Souffle Day.
The word souffle is the past participle of the French verb souffler, which means “to blow up” or more loosely “puff up” which describes a souffle perfectly.  A souffle is a lightly baked cake made with egg yolks and beaten egg whites that are combined with other ingredients to make the dish either a savory main dish or a sweet dessert.
Two essential components make up every souffle:
A souffle gets its flavor from the base, and the egg whites provide the lift to puff it up.  A variety of cheeses, jams, fruits or chocolates can be baked into the base of the souffle.  Many souffle bakers like to puncture the top of the souffle after removing it from the oven. Then they pour mouth-watering sauces onto it, such as chocolate, vanilla or for a savory flavor cheese and herbs.
1.  a French creme patisserie base/flavored cream sauce or puree
2.  egg whites beaten to a  soft peak meringue

Gloom/Sun/Snow ~ Turkeys ~ All Natural Pest ~ Mediterranean Tortellini Salad ~ Renovation Fails ~ National Kahlua Day 


Good 25º every is frozen morning!


Yesterday the gloom disappeared about 10am and there was sun on and off as the clouds passed through..
My mountain got all the snow! Thank goodness none on the ground here!
On the mountains in the back of the house the snow looked lower...

And the turkeys were out and about...
Then Cody from All Natural Pest (1-877-662-8449 or check their website www.nobuggy.com ) came by to check the bait traps.

The bait they use is safe, so if a coyote or my dog or any animal eats the dying or dead ground squirrel or rat etc that has eaten the bait, they won't die from it.  
Cody is like all the other employees of All Natural that I have met, super nice and friendly! We had a fun chat!
Boy was I good yesterday. I decided to clean out a cupboard in the kitchen. It was filled with cake mix boxes, Jell-o pudding, Jell-o, frosting mix, and graham cracker pie crusts! Everything had a use by date from 2009 to 2013!!! Into the trash they went. It hurt to throw all that stuff away, but I just don't make those things anymore. Too bad none of it would be good to toss for the birds! 
Mediterranean Tortellini Salad
 
8oz cheese tortellini
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 bell pepper, diced
1/4 cup red onion, diced
1/4 cup kalamata olives
1/4 cup feta, crumbled
3 T. lemon juice or red wine vinegar
1 t. oregano
1 clove garlic, grated
salt and pepper to taste
1. Cook the tortellini as directed on package, drain and cool
2. Mix the tortellini with all the ingredients and enjoy!
Optional: Add other ingredients like roasted red peppers, sun dried tomatoes, artichoke hearts, or even avocado.

These are funny.... renovation fails!

Later for dinner I cooked some Schwans Turkey Sausage Patties, Cheese Curds, and a yam.... 

The cheese curds are cheesy inside and crunchy outside. Can be deep fried or cooked in the oven. I used my Power Air Fryer (http://powerairfryer.com/), drizzled them with a little olive oil, cooked at 400º for 8 minutes. Really good!!

National Kahlua Day





Make a White Russian, Black Russian, Mudslide,  Kahlua Sour, or any of the following:
Kahlua Dream Cake:

Ingredients:
2 eggs
1 box German chocolate cake mix with pudding in the mix
1 12oz pkg semi-sweet chocolate chips
1/4 cup vegetable oil
1 16oz tub sour cream (light or fat free is fine)
1/2 cup Kahlua liquor
powdered sugar for dusting
Combine all ingredients except powdered sugar and chocolate chips in a mixer. Fold in the chocolate chips. Pour batter into greased (or use cooking spray) Bundt pan. Bake 350º for 40-45 minutes, until cake springs back when touched.
Cool 10 minutes, put pan upside down on serving plate, and allow to cool completely. Dust with powdered sugar.

Rain/Snow ~ Pirate Eye Patch ~ Crockpot Chicken Alfredo Ravioli ~ Mark Moran ~ Robyn Mullen ~ Pistachio Day 



Good 34º dark cloudy morning. Rain started in the afternoon and after the wind and the pour, we ended up with about 1/2". The mountains got more snow, the Siskiyou Summit, and some in Medford...




Yesterday chores then a quick run to Ace for cracked corn for my birds.

This is interesting... why did pirates wear eye patches?

Some assume pirates wore eye patches there to cover a missing eye or an eye that was wounded in battle, but in fact, an eye patch was more likely to be used to condition the eye so the pirate could fight in the dark.
It takes an average human eye about 25 minutes to fully adapt from bright sunlight to seeing in complete darkness—if a pirate was fighting on deck in the light, then had to go under the deck to fight below deck where it is usually pretty dark, that would be a long time to go without being able to see.  The eye patch could be used to prepare one eye to see in the dark, so when they would go below deck they could swap over the eye patch from one eye to the other and see with the eye that has already adjusted to low light conditions. This would allow them to instantly in the dark.


Crockpot Chicken Alfredo Ravioli Casserole
1-1½ pounds boneless skinless chicken, cut into bite sized pieces. I like the thighs best.
2 16oz jars Alfredo sauce
25oz bag frozen or refrigerated ravioli
grated Parmesan cheese, optional
1. Spray your crockpot with cooking spray
2. Place the cup up chicken pieces in the bottom
3. Pour one jar of sauce evenly over the top of the chicken
4. Layer the ravioli evenly over the chicken
5. Pour the second jar of sauce over the ravioli
6. Cover and cook on high for 2-3 hours
7. Serve with the grated Parmesan if desired

Later dinner was a Schwans Pork Potstickers. They come with a sweet soy sauce, but I like the Frank's Sweet Hot Chili Sauce! 

Potstickers were GOOD along with veggies and tomato. I microwaved the potstickers first then put them in the Air Fryer with a drizzle of olive oil and made them crunchy on the outside. Mmmmm...


I watched the Olympics Closing Ceremony which was interesting!
