Good Friends ~ Birthday Happening ~ Black Bean Mango Salad ~


   

Good 45º morning. Not sure, but I think we hit the 90º mark yesterday.


My pal Nancy stopped by yesterday, bearing gifts ... Such a funny birthday card and wine and a darling dish towel ... Love ya, Nancy! You and I and wine on the porch this coming week! 
 
 
 
Speaking of cards, my old Wilsonite buddy, Jim Harper, sent a card. In it was half a penny
 
 
 
 
 
It says this is all that is left of the dollar I sent him for his birthday after Obama got done with it. LOL


 
 
 
 
 
 
 
 
 
 
 
 
So, an "impromptu" birthday Happening was held at PJ and Dave's yesterday. Lots of wonderful food and some of my best friends. (a few are away at this time... and they were missed!) We had the J's ... Joannie, Jeannie, Joann, Joe .. a couple of the Pats... PJ and PatC. The D's, Dave, Debbie, Dale, and Dee. The T's, Tim and Tom. And then there was Bill and Sue. LOL .. Fun!!
 
 
 

 

The food was fabulous. Some of the funniest birthday cards I have ever received. AND... Jeannie bought me the same thing I bought for her birthday that is coming up!
 
 

 

My cake was special... Route 66! Thanks PJ.

Made this to take to the 'happening'... I doubled it and it was good. Everyone seemed to like it.


Black Bean-Mango Salad
Serves 4
1 ripe mango, peeled, pitted and diced*
½ cup Italian dressing, any kind you like (use fat-free or low-cal)
Two 15-ounce cans black beans, drained and rinsed
½ cup chopped red onions
1 small green pepper, seeded and chopped
1 small red pepper, seeded and chopped
Salt and pepper, to taste
In a food processor or blender, put ¼ cup of the mango with the Italian dressing and blend until smooth. In a large bowl, combine the remaining mango with the beans, red onions, and peppers. To the bean mixture, add the mango puree. Season to taste with salt and pepper, and chill until ready to serve.*You need to make sure if you are making this ahead that you need ripe mangos. I only found one ripe one so the one I used for the dressing was less than ripe but ok since it went into the blender!


After I got home I received singing birthday calls... Tucker and Sami and Aaron and Marie. Thanks ! I also made a phone call to an old dear friend, Ronnie Lancaster, who is with hospice and has inoperable cancer. He was happy to hear from me and sounded perky and we had a nice chat. He and Jerry and Steve Voors were roommates at one time and all worked at Temple Station together and Ron retired from Homicide.
