Clouds & Contrails ~ Rogue River Murals ~ Pumpkin Soup


 

Good 48ยบ morning. A few wispy clouds and some contrails...


 
OMG, I can't believe it's the END of September already!!!
Whoppen???


Wednesday afternoon on a run to the mailbox and to take trash to the trash can I opened my trash can and there was a pile of opened mail in the bottom. I fished it out and upon inspection it was mail from a number of different addresses. There was a State Farm bill, a Costco bill, and a lot of other stuff. Yesterday I took it to the Postmaster, Noel, in RR. She said they have a form they will send out with each piece so the recipient knows what happened. That is the reason I have a locked mailbox! Then it was off to Harry and David's.


I had a blast shopping there. One of my favorite places. So many good yummy things. I brought home an artichoke/kalamata olive foccacia. OMGOOD!


Then to 7 Oaks on the way home for corn.



Almost the last of it. They shut down in October. I also got a giant zucchini to make the zucchini casserole I have on my blog from last year. Go to the archives (if you are interested) to the left and click on 2010, September, and the 28th. The recipe is there. The flowers are so beautiful at 7 Oaks...

Then to ACE for corn, wide mouth quart jars, and some blackberry spray. They have 1/2 gal canning jars and I'd like one or two, but they come in a box of 6. Any of you in Rogue River or Grants Pass or Medford who would be interested in splitting a box of them?

Fun Food Facts:
"Pumpkin soup is a soup made from a puree of pumpkin. It is made by combining the meat of a blended pumpkin with broth or stock. It can be served hot or cold, and is a popular Thanksgiving dish in the United States. Pumpkin soup was a staple for the prisoners of war in North Vietnamese prison camps during the Vietnam War."

Pumpkin Soup:
1 med size pumpkin 8oz cream cheese
yellow or red or green bell peppers
3 med potatoes 1 large sweet onion, diced
Chicken stock 1 stick of butter salt and pepper
Saute diced onions and bell peppers in the bottom of your soup pot. When soft and translucent add diced potatoes and cut up skinned pumpkin. Cover all with chicken stock. Cook on med heat until veggies are soft. Blend until smooth. Put soup back into pot and add cream cheese. Stir until cheese is melted. Taste. Add salt and pepper and butter. Cook another 30 minutes. If it's too thick add more chicken stock. Serve with crusty bread.
