Rain ~ Microwave Egg Breakfast ~ Smilebox Hawaii Day #4 Part 1 ~ Five Onion Soup ~ New Shirt


Good 45º dark and cloudy morning. Yesterday we got 1/2" of rain and temps stayed about 55º all day. Looking for the same today....




Breakfast yesterday was leftover rice, two eggs, and artichoke bottoms. First rice went into ceramic dish, two eggs cracked on top (pierce yoke with sharp knife), top with parmesan cheese, add in yokes and salt with garlic salt. Put ceramic saucer on top, microwave 2 minutes 30 seconds. Perfect!!!

Five Onion Soup

1/4 cup butter
1 leek chopped, white part only
1 yellow onion chopped
1 red onion chopped
2 shallots chopped
2 celery stalks chopped
1 garlic clove chopped
1/2 cup dry sherry
4 cups chicken stock
1 (12 oz) russet potato, peeled, cut into 1" pieces
croutons
Melt the butter in heavy Dutch oven over medium heat. Add next 7 ingredients and sauté until translucent (6-10 minutes). Add sherry, simmer until liquid evaporates (about 3 minutes). Add 4 cups chicken stock and potato. Simmer 20 minutes, until potato is very tender. Lightly pureé soup in blender or food processor in small batches. Season with salt and pepper. Bring back to simmer. Thin with more stock if desired. Serve with croutons.
If you like you can heat the broiler and take some small crusty toasted bread slices, top with cheese, broil until cheese melts and top each soup bowl with on.

We used to go to Rau's down on Beverly to get Jerry's cigars. Hand rolled with Cuban tobacco by Cuban ladies! And they had the wildest coffee they served us. It was only about a shot glass full, but it kept you pumped up the rest of the day! POTENT.
