Mexican Lasagna ~ The Duke ~ Deer ~ Maggie ~ Artichokes

So, yesterday after I wrote my blog, it rained more. and more and more.....

I got an email with a "Mexican Lasagna" recipe so I compared it to mine... Mine sounded better. It's a recipe I probably have already shared, but really, you should try it. I got it from a lady on Catalina Island from one of the 4th of July potlucks we attended....

1 pound ground beef                   
1 large can refried beans
2 t. ground oregano 2 t. ground cumin
1 t. garlic powder 12 uncooked lasagna noodles
2½ cups bottled salsa 2½ cups water
2 cups sour cream 1 cup diced onions
2 cups grated cheese (Colby-Monterey Jack combo or Mexican blend)                 
2 cans sliced olives
3 green onions - chopped diced tomato

1. Combine uncooked ground beef with refried beans in large bowl. Add oregano, cumin, and garlic powder. Mix well. (hands are best) Spray 13x9x2 pan with cooking spray. Place uncooked noodles on bottom of pan ... four across (overlap a little) and break the end off one and put sideways. Spread half the meat mixture over the noodles. Top with more noodles and the remaining mixture. Top with more noodles.
2. Combine the salsa and water, mix well, and pour over all. Cover with foil and bake 350º for 1½ hours. Make sure to place pan on cookie sheet, as the mixture always overflows!
3. Combine sour cream, onions, & olives. Spoon mixture over top of casserole. Top with grated cheese. Sprinkle with green onions and diced tomato. Bake uncovered until cheese melts.

Some recipes for this dish have tortillas in them and/or corn. This one is best. Lots less work, since it all cooks together, instead of the meat separately first.

Little Missy Doe was out munching grass... Maggie was doing what she does best.... and I have artichokes!
