Now.......... the weather folks have changed their minds AGAIN............ rain on Thanksgiving! MAKE UP YOUR MINDS!!!

 
 
 
The turkey I cooked yesterday...... it was 9 pounds..

Inside the bird I put fresh garlic, salt, and True Lemon ... http://www.truelemon.com/ .. (it can also be purchased at Amazon.com) and I put slices of butter under the skin on the breast.. then drizzled the whole bird with olive oil...

I used Grunt Rub sprinkled on top of the olive oil....
This rub comes from Code 3 Spices..

I always put water in the bottom of the roasting pan. (by the way, this pan is about 49 years old!)
Came out perfect with a super good crunchy skin and very moist meat.
 
The giblets I cooked in salted water. When I make gravy I will use that water. It will also go into the soup I make with the turkey bones. The garlic pieces will also go into the turkey soup along with turkey meat and veggies.

Then I roasted a whole head of cauliflower.. 1½ cups Greek yogurt, 1 lime or lemon zested and juiced, 2 T chile powder, 1 T cumin, 1 T garlic powder, 1 t curry powder (didn't use that as I don't like it), 2 t kosher salt, and 1 t. pepper. In place of the lime I used "Key Lime Seasoning" I got from World Market, but they don't have it anymore, but Amazon has several kinds...

Heat oven to 400º. Trim the base of the cauliflower to remove any green leaves and woody stem. Mix all the spices with the yogurt and rub it all over the cauliflower. (using your hands).

Place on greased baking sheet and roast until the surface is browned and dry .. about 40 minutes. The marinade will make a crust on the surface. Let cool for about 10 minutes before cutting into wedges. Stays crunchy.

Sadly his wife took an overdose of pills after leaving him a loving note but said she couldn't go on any longer. Apparently she suffered from horrible migraine headaches.

1 18.25-oz boxGerman Chocolate Cakemix ( I prefer Duncan Hines)
1 1/4 cupswater
1/3 cupvegetable oil
3 largeeggs
1 15-oz canCoconut Pecan Frosting

Blend together in large bowl, the cake mix, water, oil and eggs at low speed until moistened. Beat at medium speed for two minutes.

Fold in Coconut Pecan frosting until thoroughly combined. Pour into bundt or tube type cake pan.
Preheat oven to 350 degrees and bake for approximately 50-60 min. or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 15 minutes. Remove from pan and garnish with powdered sugar. This cake is soooo moist and good!!!
