Sami's Gymnastics Competition ~ Sunday Football ~ Stuffed Pumpkin


Good 50º drizzling morning.

Yesterday I left here just after 8:30am and headed to the gymnastics competition in Grants Pass. Sami was participating. It was called The State of Jefferson Memorial Invitational.

Here is the video of her floor exercise....
By the end of the event Sami had won first in the Floor and the Bars and 3rd place in the Vault and the Beam. She WON All Around for her Level 2!!!! AMAZING. She is AWESOME!!!! I cried tears of joy!

On the AOL Sign on screen they have a picture of my Bruiser!!! Same white belly and white nose and white paws!

Dinner last night was stuffed pumpkin...
I re-hydrated the veggies I got from Harmony House (through Amazon.com) .. chopped onion, chopped mushrooms, chopped spinach, and chopped red/green bell peppers...



Ground beef (enough to fill the pumpkin cavity) was cooked with garlic salt and a 'touch' of oil...

I cooked a package of gnocchi (in boiling water with garlic salt until they float.. drain) and only used half...

Added the veggies and gnocchi to the ground beef, cooked until well mixed and heated....

Added beef mixture into cleaned out, dried, and salted pumpkin...

Put top on pumpkin. Place in pie pan with about 1" of water..

Cook in 300º for 2-3 hours, until you can easily push in the pumpkin skin.

Serve pumpkin by scooping out the stuffing along with the cooked pumpkin. Serve with salad...

This particular pumpkin was too small for scooping, so I just cut off a chunk! Love this. Very tasty. You can use any kind of ground meat and any kind of vegetables you prefer and I like the added gnocchi!
