Fog ~ Sun ~ Watch Cat ~ Corned Beef Quiche


Good 31ยบ VERY cold foggy morning!  You can see two of the geese on the barn roof. They are up there honking...
 
Here is a picture of downtown Grants Pass from their camera at 7th and G streets... see, sunny! No fog! Obviously 9 miles up the road is a different climate zone!

This video came from Gator, my email friend in Florida. This cat is nuts like Bruiser and gives the postman a bad time!!! Bruiser would too, if given the chance!


This following recipe from my friend Patty. Said her friend Bev made this when they were visiting in Montana. This is a good "after St. Pat's Day" recipe for your leftover corned beef.
Corn beef Quiche

1 (15½ oz) can corned beef hash or 1½ cups finely chopped left over corn beef
1/4 cup finely chopped onion
9 inch unbaked pie shell 
2 eggs
1 container (4 oz) whipped cream cheese with chives
1 cup cottage cheese
1/4 tsp pepper

1. Preheat oven to 350 F
2. Combine corn beef & onion, use to line bottom of pie shell
3. In medium bowl, beat eggs until frothy. Add remaining ingredients, blend well and top the corned beef mixture.
4. Bake 50 minutes. Serve warm. Makes 6 to 8 servings.
I would also add with the corned beef, about 1 cup of cooked chopped cabbage.
