Christmas Luncheon ~ Tucker's Christmas Show ~ Heart Healthy GOOD Mac & Cheese!


Good 28º morning. Foggy. A surprise! A warming trend..... was 20º just a few mornings ago..... but still cold enough that my UPS guy, Dave, isn't wearing shorts!


Everyone was sad that Harry Morgan died...
Colonel Potter on MASH and Bill Gannon on DRAGNET, but you know, he was 96 years old. My goodness, we should all be so long lived! RIP Harry. You had a great life!


Yesterday was a busy one... JCRW Christmas luncheon. We brought bags of food for the local Medford charities ...I filled a bag with this...


We were entertained by the choir from Grace Christian High School. They were wonderful and fun! Our club donated money to their project fund.

Then to The Grange where I picked up a free bag of nyjer seed ($24.99 value). That is because they have "seed cards" that when you buy 10 bags of birdseed you get a free one. Cool. Then to Costco. Then to Ray's Market. Then home! At 5:30 I left for Grants Pass to the Christmas Show Tucker's 2nd and 3rd grade classes were putting on. It was horribly foggy, but luckily I found the school. Knew I was in the right place when on the program it said : "Trees .... Tucker Pendleton". Brian Jen Sami Jean arrived, and luckily I had saved seats, since half of the audience had to stand...
Jen stood to take pictures and Sami got a good view from standing on her dad's lap!

And Tucker did a wonderful job as a 'tree'.....

Back home again, a fire, my chair, a glass of wine, sleeping dog, cozy comforter, and a cat on my lap!

Yesterday I posted this "heart healthy" mac and cheese recipe from Paula Deen on my FB page. My daughter-in-law, Marie, made the recipe and said she and Aaron both loved it! It was posted on Dr. Oz's site...

Dr. Oz challenged celebrity chef Paula Deen to transform her favorite dishes by cutting the calories and fat in half. By using low-fat cheese and milk, Paula Deen’s Healthier Mac and Cheese keeps all the cheesy flavor of the original recipe without destroying your diet.

Ingredients
Makes 4-6 servings
2 cups whole wheat or regular elbow macaroni (8 oz)
2 cups shredded reduced-fat cheddar cheese (8 oz)
1/2 cup low-fat evaporated milk
2 large eggs, lightly beaten
1/4 cup reduced fat sour cream
1 T. Dijon mustard
1/2 t. salt
1/4 t. cayenne pepper
1/3 cup grated parmesan cheese

Directions
Preheat the oven to 350°F. Coat a 13x9-inch baking dish with cooking spray.

In a large pot of boiling, salted water, cook the macaroni according to the package directions. Drain well and transfer the pasta to a large bowl. Add the cheddar and stir until the pasta is coated and the cheese has melted.

In a medium bowl, whisk together the evaporated milk, eggs, sour cream, mustard, salt and cayenne pepper. Add the milk-egg mixture to the macaroni and cheese and stir well to combine. Scrape the mixture into the prepared baking dish and sprinkle the parmesan evenly over the top. Bake until golden brown and crispy around the edges, 35 to 40 minutes.
