Smoke/Clouds/Heat ~ Oregon/No. Cal Fires ~ Avocado Chicken Salad ~ Tom & Del Graves ~ Deer ~ Salmon/Artichoke Bottoms/Green Beans/Celery ~ US Coast Guard Day


Good 61º very smokey wispy cloudy morning.



When I went out to take the above picture this morning, the young doe was in the upper pasture...

Weather yesterday started out great except for the smoke coming into the valley. By 9am we warmed to 73º, 11am 87º, 1pm 101º, 2pm 105º, 3pm 108º .... again.


The smoke from all the No. Cal and Oregon fires has infiltrated our valley and it's AWFUL! Really stinky!


Here is a list of the fires in Oregon:

Bruiser had to go out and nose around the area for several hours, but Dude sniffed the smoky hot air and came right back in. Me too!!!


How about this... Avocado Chicken Salad.... Serve this as an entree, in sandwiches, pita pockets, or as a filling for a lettuce wrap....
Ingredients:

2 large chicken breasts  (or some rotisserie chicken breasts already cooked)
3 medium or 2 large avocados
1 cup corn, from 1 cooked cob
6 oz bacon cooked and chopped
2 T chopped dill (if you don't like dill ... a pungent and subtle anise flavor use chopped fresh parsley and or chopped chives.....
1 hard boiled eggs, cut in quarters
1/4 cup green onion chopped
Lemon Dressing:
3 T fresh lemon juice
3 T extra virgin olive oil
1 t. sea salt or to taste
Now one dressing a fav of mine is to mix BF Mayonnaise with lemon juice. Mmmmm.......
1. Dice or shred the cooked chicken breasts  and put into large bowl.
2. Peel and pit the avocados. Slice into bite sized pieces and add to chicken.
3. Add the corn that has been cut from the cob, toss in onions, bacon, and dill or parsley, and eggs.
4. Add dressing ingredients to small bowl and mix. Drizzle over salad and toss to combine.

Later I finally saw a deer.... they have not been around for over a week and I think local cougars have something to do with that!  This doe was laying in the shade for a couple of hours.

Then later, early evening, Dude wanted to go out, but this baby deer and her mom were out there , so I waited to let him out until they went back into the trees....


Dinner was an Omaha Steaks marinated salmon filet cooked in the Air Fryer. I plated some cold green beans and a couple artichoke hearts with a dab of mayonnaise and bacon salt, and tossed some celery with olive oil and put in the Air Fryer at 370º for 4 minutes. OMGOSH... all sooooo good!

Interestingly, I had never cooked celery to eat it just by itself, always ate it raw or chopped it up and stirred it in a pan with onions etc for a sauce or stew....


Then it was chair, wine, TV.... Cops Unloaded, NYPD Blue, Blue Bloods, and Family Feud.

US Coast Guard Day


U.S. Coast Guard Day honors the military branch that protects our waters and shorelines. The U.S. Defense Department suggests that this day is largely an internal celebration for all Coast Guard personnel and their families, past and present. But, we'd like to encourage everyone to honor the brave members of this important branch of the military.
Celebrate U.S. Coast Guard Day by learning more about the responsibilities and functions of the U.S. Coast Guard. They are now playing an even  more extensive role in Homeland Security to protect our country.

We salute Coast Guard personnel today and every day. We hope you do, too.
