Rain ~Bruiser ~ Geese ~ Crow ~ Deer ~ Corned Beef & Veggies ~ Corned Beef Quiche ~ Doug Breidenthal ~ Baby Fox


Good 48ยบ foggy foggy morning.


Yesterday it was super gloomy.... and rained. We got 1/2".  Sigh.... But, I fed the birds and along came the geese...here they go back up the hill...

and look who also showed up.... sweet.


Even with it raining, Bruiser was outside..... and drinking from the bird bath!


I cooked my corned beef... put in Crock Pot, after washing the beef I put brown sugar on it and added in 2 bottles of Guinness...



After 2 hours on high I added in mushrooms and celery.

After 4 hours I turned it to low and added in the carrots. At two hours left I added the potatoes. The last hour I added the cabbage....





                             Go raibh maith! (Irish, for that was good!)


Ok, St. Paddy's Day is over, and everyone has leftover corned beef.... try this... OMGOOOOD!!!!

1 (15½ oz) can corned beef hash or 1½ cups finely chopped left over corn beef
1/4 cup finely chopped onion
9 inch unbaked pie shell 
2 eggs
1 container (4 oz) whipped cream cheese with chives
1 cup cottage cheese
1/4 tsp pepper

1. Preheat oven to 350 F
2. Combine corn beef & onion, use to line bottom of pie shell
3. In medium bowl, beat eggs until frothy. Add remaining ingredients, blend well and top the corned beef mixture.
4. Bake 50 minutes. Serve warm. Makes 6 to 8 servings.
I also add with the corned beef, about 1 cup of cooked chopped cabbage.
