Good 41º clear sunny morning. Temps might hit 80ºs!
Only warmed to 67º yesterday. Stayed cloudy all day.

When I went out about 3:15 the doe and her fawn were laying in the tall grass...



 
Yesterday morning I went to Tap Rock for Sunday Brunch.

Brian, Jen, Sami, and Tucker walked in just after me. Then Jennifer and Mike.

Sami wanted to sit with me... biscuit, sausage, bacon, fresh fruit, and a waffle with whipped cream and chocolate chips!

My breakfast... sausage, bacon, scrambled eggs, biscuit & gravy, eggs Bennie, and cheese blintz...  OINK OINK OINK!
Sami brought her paper and crayons. She drew a frog for Jennifer, a lady bug for Mike, and a frog for me.... I framed it when I got home!

Stopped at the store to get some cauliflower to make that recipe from Saturday, but was too full to even think of cooking! Told the produce guys about the 'all you can eat Sunday buffet' and they said they'd be going next week, especially when I told them about the roast beef and ham and biscuits and gravy!

Here is my foolproof way to cook prime rib, perfect every time:

Make a rub of salt and pepper and garlic and/or onion powder and or any other type of herb you like and you can even mix it with butter or olive oil .... rub onto roast. Put in roasting pan, turn oven to 550º. When oven is ready put in the roast and cook it 5 minutes for every pound for rare, 6 minutes per pound for medium. Then turn off the oven and DO NOT OPEN THE OVEN DOOR FOR 2 HOURS! Done to perfection.

Here is a formula: For me it was 3.75 lbs x 5 min. = 18.75 minutes or 19 minutes.

Oh did I ever drool looking at your breakfast! I wouldn't have been hungry for the rest of the day. Yum yum!

Your method for cooking prime rib is the same that Melinda Lee touts. I have made it that way many times. The first time was really scary but it worked! I cook mine to medium well so I had some figuring to do. I put a sign on the oven door! Taking no chances that someone would snoop. :(

This weather here is strange. It's been cold and rainy and this week it's supposed to be in the
80's and 90's. Go figure! I don't know when I will be getting out my summer clothes! :(

Gloomy outside- but happy inside- my favorite sort of weather.

Prime rib night on a Monday? Seems like that one should be something like first Sunday of a month. A time when you can put your feet up before and after.

I like to stuff garlic cloves under the fat layer before roasting.
