February 7th
National
Fettuccine Alfredo Day
In 1914 Chef
Alfredo di Lelio put his mark on a dish at his restaurant in Rome that excieted
some visiting Americans and quickly became a staple of Italian-American
cuisine.
Be
creative... add anything you like to this, like bacon, mushrooms, chicken, cut
up leftover steak, green beans, peas, broccoli, green onion, parsley.... be
brave and experiment!
Alfredo
Sauce:
¼ cup butter
1 ¼ cups heavy cream (whipping cream)
8oz cream cheese, cubed
1 cup grated Parmesan cheese
1 T. garlic powder
nutmeg
salt
white pepper
Melt butter in pan, do not let brown. Add cream and bring to
soft boil. Add cream cheese and Parmesan cheese and cook until cheese melts and
becomes thicker. Reduce heat to low. Cover and simmer for 30 minutes, stirring
often. Add sprinkle of nutmeg, salt and white pepper, and garlic powder. Stir
well. (Here is where you add in extras... bacon, cauliflower, broccoli, chicken,
peas, green onions, sauteéd mushrooms) Pour over cooked fettuccine noodles or
whatever pasta floats your boat... sprinkle with fresh parsley.
If you are adding broccoli or cauliflower, toss them into
the pasta water while it's cooking for the last 4-5 minutes. Drain well.
...Or buy a
jar of sauce already made.... Not as good, but quick and
easy....

That fettuccine sure looks good. Yum.
That cat stuck on the "screen" with his tongue out is hysterical. I picture Bruiser doing that. LOL
