19 Degrees! ~ Tabouli & Egg ~ Broccoli Cauliflower Casserole

Good 19º frozen solid morning. Pretty, but freeking cold!



Since Brian gave me an oil filled electric radiator I have slept warm and snuggy. That back bedroom is now comfortable at 68º all the time, instead of being 50º! The oil heats up and then it radiates through the room and into the back porch and up the stairs and even into my bathroom across the hall. Amazing.



 
 
 
 
 
 
 
For the last couple of mornings I have made breakfast... leftover tabouli in a bowl, two eggs broken into a well, microwaved with a paper towel on top for 3 minutes on high, then sprinkled with cheese. Mmmmmm mmmm mmm!

Last night I made a super yummm casserole with broccoli and cauliflower.
Ingredients:
4 cups broccoli florets - 4 cups cauliflower florets
2 cups whole milk - 1/4 c + 1 T. butter divided
1/3 c all purpose flour - 2 t. dry mustard
salt, pepper, cayenne or... Slap Ya Mama Cajun seasoning
2 cups shredded Swiss or Gruyére cheese
1/2 cup panko


Heat oven to 425º. Spray a 9x9 casserole with Pam.

Break up about 4 cups each of broccoli and cauliflower and cook them in boiling salted water for about 3 minutes. Drain and put into large bowl with ice water to stop the cooking. Drain and dry off.


Microwave milk 2-3 minutes, until hot but not boiling. Melt 1/2 c. butter in large pan, whisk in flour, cooking and whisking 30 seconds. Remove from heat and whisk in the milk. Return pan to heat and bring to boil, whisking continually. Reduce heat to low and simmer until thick. Remove from heat and whisk in dry mustard, 3/4 t. salt, 1/4 t. pepper, and a dash of cayenne. I used "Slap Ya Mama" Cajun seasoning instead of cayenne. Microwave remaining butter until melted and mix in panko.

Sprinkle cauliflower and broccoli with 1 cup of the cheese

Top with sauce and sprinkle on remaining cheese and top with panko mixture.

 
Bake uncovered 30-40 minutes until golden brown and bubbly....

This is so good, I couldn't stop eating it.... served with some cut up chicken and tomatoes. If you don't like either the cauliflower or broccoli, just make it with the one vegetable you like!
