~ Taaa daaa RAIN! ~ Rio & Neko ~ Baked Polenta ~ Wine ~




    
Good 46º pouring rain morning! It started (Like the weatherman said) after 9pm. The wind blew HARD and it looks like we got almost 1/2" rain. Had a snuggy fire and watched Dancing With Stars to see the finale. I was disappointed as I wanted Kriste to win, only because she has overcome such odds. Amazing girl. Ok, onto the next big deal.....
 
 
PJ and Dave took off for Lebanon Oregon, south of Salem, to see a 5th wheel for sale yesterday. They left Rio and Neko in their "Al-Cat-Traz" and Maggie and I went down to check on them in the afternoon. We let them out to play for a bit.... Neko likes to greet Maggie. Rio was thirsty and then they sat in the grass. Neko was stalking something, Rio was just looking bored. And the fish were
hungry!





 
 
Earlier I was talking to Adelle (Easton) on the phone and saw this little ground squirrel bugger climb up into the grapevines...

I found a recipe for 'baked polenta'. So, I tried it.




 
1 cup polenta                               1 T. butter
3 1/4 cups lukewarm water     1 tsp salt
Preheat oven to 350º. Place ingredients into 8x8 buttered (or cooking spray) pan. I also added some Tuscan seasoning, Sonoma pepper, and canned sliced olives. Add water, stir. Bake 50 minutes.
Then I added some grated Parmesan, Swiss, and American/Jack combination cheeses and stir in, top with some grape tomatoes, and bake 10 minutes more.
 
Polenta, like rice or pasta or Quinoa, are blank palettes .. add anything that flips your skirt. Suggestions: peas or beans (drained and rinsed), or green beans, chili seasoning, green chiles and taco seasoning, garlic, chopped onions, chopped celery, water chestnuts, olives, artichoke hearts .... come on... think of something!!!!  You can cut it and eat it this way or fry slices in olive oil. Serve marinara sauce over it. Or chili beans. Or a pesto sauce. Or gravy.  If you make it let me know how you fixed it!
 
 
Maggie and I went back to PJ and Dave's  about 5pm to make sure their gate was open for their arrival and the 5th wheel they bought and was being transported to their house for them by the owners. Er, previous owners. Money had exchanged hands. Maggie and I sat by the gate and waited...

 
They arrived and we came home. All's well that ends well.

I love to soften grits texture with alittle polenta stirred in. A small batch of polenta is lovely with mozzarella stirred in with butter to melt.

And with polenta- if it isn't breakfast- it goes well with all manner of wine.
