Yesterday the smoke started off less than it had been for a few days...I could see my mountain! 


 
Tucker's Grants Pass High School Band is practicing constantly now for their trip to the NY Macy's Thanksgiving Day Parade, but with the smoke so heavy they are busing the band up to Roseburg, about 90 miles away for daily practice.
 
Breakfast was two eggs (drizzle a little olive oil or water into the bottom of a microwave safe bowl .. I use a cereal size one... break two eggs into bowl, prick yolk with a sharp pointed object, i.e. knife. Cover dish with saucer or upside down other bowl. Microwave 1 minute or for harder yolks, 1:10 seconds. After out of the microwave I added mozzarella cheese... Served with plain yogurt, a chicken thigh (sweet and sour sauce on top), and mozzarella sticks. Perfect!

Interesting about Elvis Presley....
 
 
On August 16, 1977, the King of Rock n' Roll took his last breath. Elvis Presley, just 42 years old, was found unconscious on the bathroom floor of his Memphis mansion, Graceland.  Here are  shocking facts you probably didn't know about Elvis Presley...

Elvis Aaron Presley was born on January 8, 1935, just a half-hour after his mother gave birth to his twin brother, Jesse Garon. Sadly, Jesse was stillborn and buried the next day in an unmarked grave. Though Elvis never met Jesse in life, he spoke of his brother frequently. His mother, Gladys, often said Elvis had the energy of two people.
 
The Memphis estate that would be his home throughout the entirety of his career was originally built as a 500-acre farm dedicated to the owner's daughter, Grace. When Elvis acquired the home in 1957 at the young age of 22, he kept the name but made a number of upgrades including a "jungle room" with a working waterfall and a wall of televisions so Elvis could watch multiple broadcasts at once. Today, more than 600,000 fans flock to Graceland each year to tour the King's castle, but almost no one has ever seen his bedroom.

Rumor has it that the heavily guarded room where Elvis spent his final hours remains in the exact condition it was in the night he died. Clothes remain in the drawers, sheets on the bed, and nothing touched. It's the holy grail for any Elvis fan, but almost no one has ever walked through the plush double doors. Only Elvis's family and the estate manager have keys to the padlocks, and when President Clinton toured the facility in the 1990s, he was denied access. Rumor has it there's only been one non-Presley to cross the threshold into the King's domain: actor Nicolas Cage. Cage married Elvis's daughter, Lisa Marie, and as the story goes, got a personal tour of the bedroom as his wedding present.
 
No stranger to extravagance and a glutton for greasy food, Elvis spared no expense when it came to getting what he wanted—food included. And one night, after waxing nostalgic about a $50 sandwich he once had at a restaurant in Denver, Elvis and his entourage hopped on his private plane to go get one. The trip cost a whopping $16,000. Oh, and the sandwich? A full loaf of Italian bread sliced lengthwise, scooped out and filled with margarine, an entire jar of grape jam, an entire jar of peanut butter, and a pound of bacon, deep-fried.
 
 
 
From Mr. Food.... Jalapeño Chicken Casserole

The powerful flavor kick coming from the chopped jalapeno peppers make our Jalapeno Chicken Casserole really pop. The ease of using pre-cooked rotisserie chicken means one less step to getting this one on the table in a flash.
 
 
  • 1 (10-ounce) package frozen chopped spinach, thawed
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 scallions, chopped
  • 2 jalapeno peppers, seeded and chopped
  • 1 (10-3/4-ounce) can cream of chicken soup, undiluted
  • 1 (8-ounce) container sour cream
  • 1 teaspoon ground cumin
  • 1 (12-ounce) package nacho cheese-flavored tortilla chips
  • 6 cups chopped cooked chicken (see Note)
  • 1 (8-ounce) package shredded Mexican four-cheese blend
 
  1. Preheat oven to 350 º. Drain spinach well, pressing between paper towels.
     
  2. Melt butter in a large skillet over medium heat. Add chopped onion, scallions, and jalapeno peppers; saute until tender. Remove skillet from heat; stir in spinach, soup, sour cream, and ground cumin.
     
  3. Layer half each of tortilla chips, chicken, spinach mixture, and cheese in a lightly greased 9- x 13- inch baking dish.  Repeat layers, ending with spinach mixture.
     
  4. Bake 45 minutes; sprinkle evenly with remaining cheese, and bake an additional 5 minutes or until cheese melts.

Note

Two store-bought rotisserie chickens should yield enough chicken for this recipe.

Are you ready for a fun day of some great bargain shopping?  Then today is the day because each year on August 17th, National Thrift Shop Day is observed across the United States.
A thrift shop (also known as a thrift store, charity shop, hospice shop or resale shop) is a retail establishment typically run by a charitable organization to raise money to be used in accord with the organization’s stated charitable purpose.
Thrift shops are a type of social enterprise that typically sell used goods that are donated by members of the public and are often staffed by volunteers.  Donation of the items being sold allows for a lower cost to the buyers.
Saving money is on the minds of everyone these days and shopping at thrift stores is becoming more and more popular.  Clothing, furniture and household goods are great finds among the other hidden treasures within the walls of thrift shops across the country.  To some, shopping at a thrift store isn’t even about the price (that’s just a bonus!) but instead, it’s about the adventure of finding vintage and antique items.
