Today is the first day of summer!

The summer solstice is the longest day of the year – the day in which we can enjoy approximately 17 hours of daylight. In the northern hemisphere, the summer solstice takes place between June 20 and 22.. This year, it falls on Thursday June 21. There are two solstices each year - one in the winter and one in the summer. The summer solstice occurs when the when the tilt of Earth's axis is most inclined towards the sun and is directly above the Tropic of Cancer. The term 'solstice' derives from the Latin word 'solstitium', meaning 'sun standing still'.
 
 
Yesterday was another clear then clouds appeared and the temps were in the low 90ºs day. By afternoon we got a BUNCH of wind!

Interesting about the history of Macaroni & Cheese:
Rumor has it that Thomas Jefferson, the third president of the United States, could include, among his many other accomplishments, inventing macaroni and cheese (a favorite food of many!). The Wikipedia entry for mac and cheese mentions this rumor:
According to more than one urban legend, macaroni and cheese was invented by Thomas Jefferson, who, in the variant told by Alton Brown of Good Eats, upon failing to receive an Italian pasta-making machine, designed his own machine, made the macaroni, and had the cook put liberal quantities of York cheddar and bake it as a casserole.
Needless to say, the rumor is incorrect. Jefferson does appear to have served macaroni and cheese at the White House, however he definitely didn't invent the dish.
 
Macaroni was a highly fashionable food in late eighteenth-century Paris, and Jefferson not only enjoyed the dish but also commissioned William Short to purchase a machine for making it. The machine was later shipped to America. Jefferson also investigated the manufacture of macaroni during his trip to northern Italy and drew a sketch with detailed notes on the extrusion process. When Short was in Italy, he sampled the local product and concluded that the cooks of Paris made better pasta than he could get at Naples. Apparently, the macaroni machine that Short bought was either not durable or unsatisfactory, for in later years Jefferson imported macaroni and Parmesan cheese from Marseilles for his use at Monticello. While in France, he also copied a recipe for making macaroni ("Nouilly a maccaroni") without a machine. This recipe makes clear that what was eaten as macaroni was what Americans today would term spaghetti — the dough was rolled thin and cut into strips, and each strip was then rolled with the hands into a noodle shape.So there you have it. No one knows exactly who invented mac and cheese, but it wasn't Jefferson, though he seems to have been a fan of it.
 
 
Fried Macaroni & Cheese Balls
 


The next time you invite your friends and family over to watch a game, set out a platter with Fried Mac 'n' Cheese Balls and get ready to watch them dive, dip, and lunge for these munchies! They're going to love the crispy coating and cheesy goodness in every bite!

 

  • 1 (12-ounce) package frozen macaroni and cheese, thawed
  • 1 egg
  • 1 tablespoon water
  • 1 cup Italian bread crumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 cups vegetable oil
  •  
  • Using a small ice cream scoop or a teaspoon, shape macaroni and cheese into 1-inch balls and place on a wax paper-lined baking sheet. Freeze 2 hours, or until firm.
  •  
  • In a shallow dish, beat egg and water. In another shallow dish, combine bread crumbs, garlic powder, and pepper.
  •  
  • In a deep saucepan over medium heat, heat oil until hot.
  •  
  • Dip frozen balls into egg wash then roll in bread crumbs. In small batches, fry balls 3 to 5 minutes, or until golden brown and center is hot. Drain on a paper towel-lined plate and serve immediately. Use whatever kind of dipping sauce you like.

Notes

  • Keep remaining macaroni and cheese balls frozen until ready to fry.
     
  • If you have leftover macaroni and cheese, you can use that instead of the frozen. Just make sure it's chilled before rolling into balls.

Later I made a run into town to pick up a package at the PO, get a new sprinkler, get some boneless/skinless chicken thighs to cook for Dude, and check with the Community Center about their food pantry of food they give to the needy. They do have a food bank and take donations. After cleaning out a cupboard I have a few to donate.... several of these Harry & David dry soup mixes...

On National Selfie Day, we are encouraged to take creative (appropriate) selfies and share them on social media.
While the act of taking a selfie may predate social media, smartphones and the word which is now in the Oxford dictionary, the popularity of taking these self-portraits and the ability to do so has never been easier. Selfie sticks and multi-functional camera phones make it all too easy to take these kinds of photographs as well as group selfies (aka groupies).
