Pretty Day ~ So. Cal June Gloom ~ Mike Artoff Plumber ~ Pears ~ Picture of the Day ~ Crock Pot Nacho Chicken & Rice ~ Take Your Dog To Work Day

Yesterday it was so pretty in the morning, as usual this time of year...
 
.... and Kristen texted me about the "June Gloom" down in So Cal. Here is So Cal's June Gloom info...
 

 
We get cloud cover here in So. Oregon, and "gloom" most of the winter and it gets depressing. In So Cal their June gloom is refreshing for a time, as it's cooler!
 
 
Because of the age of my house (born 1935) and a lot of re-construction went on, but still the plumbing sucks! I had Mike Artoff out here 3 months ago to snake the kitchen pipes. So, this time he "hydro scrubbed" the pipes using a super long hose and a big machine. Should be better for a longer time!

1 lb boneless, skinless chicken
2 10-3/4 oz cans Cheddar cheese soup
1 1/4 cup water
16 oz jar chunky salsa
1 1/4 cup long-cooking rice, uncooked
 
  1. Cut your chicken into cubes
  2. Put all your ingredients in your 6-quart slow cooker and mix well.
  3. Cover and cook on low for 3-5 hours, stirring occasionally (It is done when your rice and chicken are tender)
 
**  You can use boneless, skinless chicken thighs, breasts or tenders.
 
     I know that stirring a recipe a few times while it is cooking is a drag, but it really helps to make a rice recipe in a slow cooker succeed.
 
      It helps you to keep an eye on it toward the end so you don’t end up with a mushy mess (because remember slow cookers cook differently, so what takes one slow cooker 5 hours to cook to perfection, another slow cooker may be done in 3 hours).
