Good 44º clear sunny morning.
Yesterday was beautiful, clear, and sunny. We hit 74º before
noon. Topped out at 85º. Rain predicted in a day or so and lower
temps.
The panicle on my yucca is finally growing. The yucca has been
here a long time, and this is the first panicle I have seen! Now we are going to
get flowers!! My neighbor in Temple City, Virginia Cobar, used to pick the
flowers from our yucca plants and stuff and cook them. Never got the recipe! She
did, however, teach me how to make tamales!
The Red Hot Pokers were busy and covered with bees and a
couple hummingbirds...

Since yesterday was Pack Rat Day I decided to clean out a
couple cupboards. I got rid of several things with expired use by dates! Yeah
me!
I went outside to turn off the sprinklers and smelled smoke.
Not a good thing! Called PJ and Dave and he said he thought the fire was up on
my mountain. I called the fire department and it was a "controlled burn" by
Fielder Creek. Whew!
Decided on Stuffed Portobello Mushrooms for
dinner...
375º oven
Portobello Mushrooms
lump crab meat or fake crab meat
1 egg beaten
Panko crumbs
chopped sweet onion (I used a shallot)
finely chopped garlic cloves (I used the prepared chunky
garlic)
lemon juice
salt & pepper
cheese
Remove mushroom stems and finely chop. Using a spoon remove
gills and brush the caps clean. Put in single layer in shallow baking pan that
has been coated with cooking spray or use a non-stick baking sheet. I rubbed
olive oil on both and seasoned with salt and pepper.
Mix crab, egg, Panko, onions, garlic, some lemon juice, salt
& pepper, and chopped stems. Divide between mushroom caps and gently
compress to slight mound.
Bake about 9-11 minutes, until light golden
brown.
Remove from oven, top with grated cheese and bake an
additional 2 minutes, until cheese is melted and bubbly.
I used a grated cheese blend and some fresh mozzarella
balls.
Salad was celery and dessert was strawberries.
Really Good! I will make this again and maybe tweak it using
other ingredients.
Last night was the season finales for Chicago Med and Chicago
Fire. Gonna miss those all summer!
All I know. Nuff said. Happy Hump Day. Ciao.

No Dirty Dishes Day
No Dirty Dishes Day is a reprieve from the daily pile of
dishes to wash and dry. Day after day, we do the daily chore of washing and
drying dishes, then put them away in various cabinets and drawers. We perform
this task after each and every meal, and often after snacks. Even putting them
in and out of the dishwasher and running it, can be a chore.
You deserve a break from this routine. And, today is that day.
The objective of this day is to have no dirty dishes. It is not intended to pile
them up until tomorrow.
We can think of two ways to avoid dirty dishes
today:
Use disposable plates, cups and silverware for all meals and
snacks.
Take the family out to eat all three meals. Then for snack, go
out for ice cream!
We strongly recommend that you do not pile up the dishes to do
tomorrow. This defeats the purpose of this very special day.

Sue, WHO names these "Days" anyway? There sure are some wacky ones! LOL
Your dinner looks so healthy and amazing! Do you just make them up as you go along?
I've been thinking about getting one of those microwave poachers. I gave my Eggtastic to Debbie for the little ones. I found it easier to just make Matthew's scrambled egg in a small glass bowl. Easier to wash too.
Great suggestions tho!

There are several websites that list odd holidays, T. Some are totally weird! As for food, I sometimes see a recipe and tweak it to my style. The poacher is great! xo
GOOD morning. Lovely to see some blooming lovelies to keep you company. I avoid dirty dishes every day. Then I remember I am blessed to have an automatic one. In the kitchen. With hot and cold running water. As it ages it is cranky, but gets the work done. Kind of like me.
