And speaking of 417,  Jimmy Duran, he and his wife Olga and their boys are good friends, was promoted to Lt. the other day...  CONGRATULATIONS JIMMY!

Dinner was reruns, so here's a favorite of mine:
Easy Tamale Muffins (Lighter than masa)

Foil baking cups or non-stick muffin pan sprayed with cooking spray.
2 pkgs (8½ oz each) corn bread muffin mix
1 can cream style corn (14½ oz)
2 large eggs, lightly beaten
1½ cups Mexican cheese blend, divided
1½ cups chopped cooked chicken (use a rotissarie chicken, easy!) 
¾ cup red or green enchilada sauce
Heat oven to 400º. In large bowl combine muffin mix, corn, and eggs. Stir until just moistened. stir in 1 cup of cheese. In another bowl toss the chicken with enchilada sauce.
 
Fill each of 24 foil lined muffin cups or muffin tin with 2 T of the batter. Place 1 T of the chicken mixture in the center of each and cover with about 1 T of the batter.
 
Bake 13-15 minutes, or until golden brown. Sprinkle tops with remaining cheese, bake another 3 or so minutes until cheese is melted. Cool 5 minutes before removing from pan to wire racks. Serve warm. Refrigerate leftovers.

National Cheeseball Day




 
National Cheeseball Day is a day to stuff yourself with cheeseballs. But wait!!! What kind of cheeseball are we talking about? There's the light and airy, puffy cheeseball that you munch on for a snack by the dozens. There is also the cheeseball, often decorated with nuts, that sits on a party tray until spread on a cracker. Is this a celebration derived from the snack industry, or the dairy industry?  
 
When it comes to the cheeseball snack, we are certain that you can't eat just one. Not even a handful. Cheeseballs are addicting. Place a bowl of cheeseballs on the counter, and watch them disappear right before your eyes. Toddlers and young kids are Cheeseball hounds. So are teenagers and adults. In other words, everyone lives cheeseballs.
 
The cheeseballs of holiday trays is equally loved. Strangely, it is wildly popular around the holidays and hard to find other times of year.
 

Celebrate today with cheeseballs (both kinds). Serve them after dinner during your favorite Television show, or whenever its convenient.

Good morning.

Yay for Alexander Cartwright. When I was a little gir, what I wanted most was a baseball mitt and to play on a team.

There are some good movies with scenes on immigration and becoming American. In "Brooklyn"- an Irish girl struggles with assimilation- and wins. In Concussion- why the doctor came to America- one of the most heartfelt soliquys on why the best and brightest come.... it made me well-up with gratitude.

Enjoyed catching up on two days of your blog. Can't believe how busy this weekend has been for me.

Did you hear about the dumb new thing that the Sheriff has demanded? The emblems of the boots on the helmet at ELA Station HAS to be removed! EVERYTHING with that on it. John says it's embedded in the design on the floor for heaven sake! I guess some of the uniforms have that patch on the shoulder?
I do not understand WHY as it will cost lots of $$$ to remove it from everything. grrrr I am wondering why and the reason behind it! :(

Yes, the emblems was a topic at Laughlin. Irritating that every station and unit will have to get rid of their emblems. Also he is taking rank away from Reserves. He wants our department just like LAPD!!! Grrrrrrrrrrrrrr...... xoox
