Jennifer ~ Hill-Liar-E Name Change ~ Grants Pass Haggen ~ Power Out In RR ~ Tamale Casserole

Good 62º cloudy morning.

Boy, yesterday morning the temp was 63º and the humidity was 79%! I was melting!!! This morning not much different... 62º and 71% humidity!
Today is a very special birthday. Oh thank Heaven for 7-11! My daughter-in-law Jennifer is celebrating! HAPPY BIRTHDAY PRETTY GIRL!!!

She wanted a day trip to the coast, so they are heading that way. Tomorrow we'll all celebrate!

Later I went to Grants Pass. I wish I had my big camera with me as the cloud formations were amazing. One looked like a bear and a lion going head to head. Another looked like a shark eating another fish! Stopped at Brian's office. Left him some big red/white/blue beach towels for the kids and Sports Illustrated magazines and some People magazines for Emily. Then off to Safeway for essentials, the post office to mail cards, and a stop at the new Haggen store (formerly Albertson's) on Beacon across from Fred Meyer. I checked out this one. Had been in the one by Brian's office off Allen Creek. The one by Brian's office had a John Deere in the produce department. This one has a mamma cow and a baby cow. the bakery they have Snicker's cakes!OMG!!! How horrible is that!!!!
I had to fight myself to keep from bringing one home. They also have the single layer version! I did bring home some cranberry orange scones to have with my tea!
Coming down the off ramp into RR suddenly the signal light went off. Good thing people know what to do and took turns through the intersection. At the gas station they said they didn't have any electricity so will get gas another time! On the news it said 5200 were without electricity in Gold Hill through Rogue River due to a truck and trailer "catching a switch on a power pole". Whatever that means.
Decided to be creative with dinner so searched the freezer. Got out some tamales made my "tamale casserole". I normally make it in a 9x13 pan, but this time cooked it between two 9x9 pans.
12 tamales -XLNT are great for this - (unfortunately I used some homemade ones I had....can't remember where I got them!)

Remember the song on the ad in the 1950's and 1960's ...†♫♪ ♪♫•*¨*•.¸¸   "Ex-a-len-tee tamales .... so good when you are hungry....†♫♪ ♪♫•*¨*•.¸¸Ex-a-len-tee tamales!  Try one and you will agree. Sí Sí " 
1 can black beans, drained
1 can diced tomatoes with lime or chiles, drained
1 can chopped green chiles
1 can creamed corn
1 med onion, diced
2-3 cloves garlic, sliced
grated cheese
1 can sliced black olives
I reconstituted some sliced leeks, garlic, onion, and cilantro.

Steam the tamales, unwrap, cut in half lengthwise, and line the bottom of the dish with the tamales, meat side up.

Mix all the canned goods and add the garlic and cilantro (I used a capful) and spread half on top of the tamales.
Add a layer of cheese and start again so you have two layers. Top with cheese and olives.

Bake covered 350º for about 30 minutes. Remove foil and bake another 30 minutes until bubbling.
Topped mine with sour cream.

Then it was my chair, wine, and TV.

XLNT tamales have always been a favorite of mine, since I was 11 or 12. I usually have two covered in Hormel chili with beans, chopped onions, grated sharp cheddar.
