Mo' Rain ~ Lion Love ~ Corned Beef Quiche ~ Rice/Veggies/Chicken/Cheese ~ Dips


Good 42º raining morning.  Been raining for a while ... Since this rain storm started my rain gauge has now filled to 3".  Some radar here but the big storm is north in the Portland area..

Leftover Corned Beef?
This following recipe from my friend PattyK. Said her friend Bev made this when they were visiting in Montana. This is a good "after St. Pat's Day" recipe for your leftover corned beef.
Corned Beef Quiche

1 (15½ oz) can corned beef hash or 1½ cups finely chopped left over corn beef
1/4 cup finely chopped onion
9 inch unbaked pie shell 
2 eggs
1 container (4 oz) whipped cream cheese with chives
1 cup cottage cheese
1/4 tsp pepper

1. Preheat oven to 350 F
2. Combine corn beef & onion, use to line bottom of pie shell
3. In medium bowl, beat eggs until frothy. Add remaining ingredients, blend well and top the corned beef mixture.
4. Bake 50 minutes. Serve warm. Makes 6 to 8 servings.
I would also add with the corned beef, about 1 cup of cooked chopped cabbage.
 
Yesterday I put a bunch of stuff in my car I'm taking to the Salvation Army.  Took the golf cart to the road to put out the trash and Dude had a good run. Warmed to about 55º and stayed cloudy all day. Ten minutes after we returned up our hill it started pouring rain! Whew!
 
Dinner.... I cooked some of the Lundberg Rice Blend...

It is long grain brown rice, sweet brown rice, wild rice, whole grain Wehani Rice ( http://en.wikipedia.org/wiki/Wehani_rice ) and whole grain black Japonica Rice.
The rice cooked in the rice cooker... 1 cup to 2 cups water. Dumped it into a large bowl. Then drained and added in a bunch of the re-hydrated veggies from the day before...



I had some chicken thighs I cut up.....



Added chicken thighs to rice/veggie mixture and mixed well.... most of the veggies went in, but saved broth and about a quart of the veggies for soup later.

Then I added in some minced garlic, drained sliced mushrooms, and drained artichoke heart quarters....

I seasoned it up with pepper, ground garlic sea salt, and some of Trader Joe's 21 Seasoning Salute....

After it was all mixed I put it into the casserole Crock*Pot.

Sprinkled mozzarella cheese over all. Turned on the CP to "warm" and left it til I was ready to eat.
SOOOOOOOOOO GOOOD!!!!!! No guilt meal!!!

My thoughts lately about losing weight, again... after watching my friend eat two bites only of a wonderful flatbread pizza.. sigh. I eat more than I need to. So out goes the pasta for awhile and the bread. Groan........................... Should get this shirt!
