Good 50º raining like mad morning. Got another 3/4" from yesterday. 1½" now and rising. Good thing I have a boat! Strange when the weather predictors are right.

Yesterday I braved the rain and went to Safeway for some needed groceries. I buy canned food for Dude, he eats for dinner because he has chicken thighs and chicken stock and healthy kibble for breakfast.... Anyway, they were having a sale on the dog food (ended today) ... My hairbrush broke, got a new one. Out of hairspray, got some Aqua Net. When I worked for Fabergé it looked like this:

Now the brand is owned by Lornamead and  it looks like this:

I still have a couple of the travel size Aqua Nets from back in the day...

National Carrot Cake Day

2 cups sugar
1 1/2 cup vegetable oil
eggs
2 cups flour, sifted
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 can (8oz. size) crushed pineapple, drained
1 cup chopped walnuts
1 teaspoon vanilla extract
2 cups grated carrots
***Cream Cheese Frosting***
box powdered sugar
1 package (8 ounce size) cream cheese
1 teaspoon vanilla extract
1/2 cup butter


This is hands-down the best carrot cake you will ever eat!

Beat the sugar oil and eggs together in a mixing bowl. Add the dry ingredients and mix well. Add in the pineapple, walnuts, vanilla, and carrots. Stir until well blended. Bake at 350º for 35-40 minutes if you use three 8" round pans that have been greased and floured. If you used a greased and floured 9x13 cake pan, you will need to extend the baking time.

Cream Cheese Frosting :
Mix all together until smooth and creamy. You may need to add a tiny bit of milk or cream to get the consistency right. Spread on cooled cake.

Michener is a favorite author here. I read Hawaii when I was in grade school- and I remember the businessman telling his protégé to never take advantage of someone down on his luck- pay full value.

Carrot cake- I have a DELICOUS recipe- but there was an accident involving a police car between where I live and the super market. Can't get near the intersection now.
