Yesterday I met the SOW Sistas (Southern Oregon Winos) at Wild
River Pizza and Brewery for lunch. Their site is interesting.. lots of
photos...
There were 12 of us...
Hilome, Nadja, Nancy, Jennifer, me, Jeannie, Kathy, Dee,
Micol, Linda, PJ, and Sharon.
My lunch was the Shrimp Louie Salad...Mmmmmmm!!!
Shrimp, avocado, hard boiled egg, sprouts ...
Some of the girls had pizza and some sandwiches.
Fun time!!! Lots of chatter and laughter.
My niece, MaryAnn whom I
have not seen in YEARS... is 61 years old today! OMG. How'd that
happen????
And... Barry and Dawna are
celebrating 45 years. HAPPY ANNIVERSARY KIDS!

I made a meatloaf the other night. I tweaked a recipe I saw on
line. It was for "Tangy Apple Chicken Loaf".
So..................... instead of ground chicken I used ground turkey.
Didn't have celery. Didn't want to use onion. Didn't have the seasonings they
used so used ones I like. My ingredients: turkey, cheese, Panko, carrot, green
and red chili peppers (from Jeannie's garden), egg, roasted garlic, apple, lemon
pepper, taco seasoning, homemade celery salt, citrus rosemary sea salt, parsley,
applesauce (homemade), butter.
Peel and grate a large carrot, cook in butter for about 10-12 minutes, add
in the peeled chopped apple, stir and set aside
Next mix all the ingredients, about 1/3 cup of the applesauce,
and seasonings (to taste). Put in loaf pan, top with grated cheese. Mix the
mustard, honey (this was lavender honey from Provence France my friend
Judy brought me... then it was soooo good I ordered more from Amazon.com!), and
the other 1/3-1/2 cup of applesauce, and slather on top of the cheese.
Bake in preheated 375º oven for about 1 hour. At the same time
I had the large carrots peeled, halved, and halved lengthwise in a 9x13 pan.
Mixed olive oil, pepper, and sea salt and a little garlic salt and drizzled over
the carrots. Make sure carrots are well coated with the oil mixture. Put in
oven with the meatloaf. Roast 20-30 minutes, until browned and
tender.
I'm certainly going to make this again~! AWESOMELY
GOOD!!!
