Linda ~ Muffin Tin Eggs ~ Weekend Football Schedule ~ Pizza


Good 44º clear morning. Hit 95º yesterday. Nighttimes cooler but days just as hot. So typical for Oregon... heater on in the morning and AC on in the afternoon! Or the dress code for most males is shorts and a warm jacket.  !!

So, what about Muffin Tin Eggs... (I posted this before, but they are soooooooooooooo good, thought you might like to see it again)
 
I discovered a new way to make a quick and easy breakfast, only ... I made it for dinner.... I used 5 eggs, some white/yellow cheese, Parmesan cheese, tomato, reconstituted dried sliced garlic, onion,
bacon (you can get the bacon crumbles ... already cooked... at Costco. I love them. So easy to add to dishes)
and chilies.

Then .... the easy part, mix it all together (cook the bacon first. the pre-cooked goes in the microwave for about 25 seconds... no muss. no fuss!) You can add chopped bacon to the mix, or not and eat it whole. Your choice.

After you put the mixture in muffin cups that have been sprayed with Pam, bake at 350º about 25 minutes.

These were GREAT!!!!! Now more experimenting .... options to add... cooked chorizo, ham, scallions, diced chicken, red chili flakes, chopped mushrooms, garbanzo beans, black-eyed peas, shredded zucchini, mozzarella cheese ball in each, or anything that flips your skirt! You can customize them and add each person's favorite item(s). Easy and clean up a breeze! Make them larger or smaller. Jeannie suggested mini-muffin size for   
hors d'oeuvres! Of course your cooking time will vary.

Sadly for the Green Bay Packers the Seattle Sea Chickens wamped them in the game last night..36 - 16 !

mmmm Those egg muffins really appeal to me. I would love them for my brunch as I don't eat breakfast when most folks do. I would love to make them for Matthew. He is such a fuss budget eater maybe these would appeal to him. I will have to figure out what ingredients to add that he will eat. My boys weren't fussy eaters so this is new to me.

I take it you don't add any milk at all? I ask because I add a little milk when I am scrambling eggs. Yum Yum!!

As with scrambled eggs, T, you could add in a little mayonnaise. Creamy. But this way they were OMGOOD!!

Twins? LOL. Yes, we occasionally had on the same clothes. Guess we shopped at the same place! xo
