LASD Graduation ~ Sedona ~ Meatball Tomatoes ~ Top Paid NFL Players



Good 45º morning. It got to 102º yesterday afternoon. UGH. 


The following will only be of interest to my LASD friends....
I forgot to mention that on Thursday the LA Co Sheriff's Dept had Class 401's graduation on live streaming video from Biscailuz Center. I watched and saw the 46 LASD grads get their diplomas. It was fun. The academy had moved to the Whittier campus a number of years ago and just recently has moved back to ELA. This is the first class graduating since the renovation. On the left in the background is the BC Range where Jerry worked. 





Here is Jerry's Class 115. He's at the top and on the far right of the first row of female Deputies is Sally Harwell.

Today is the special birthday of my Italian son Alex's daughter Sedona Corsaro. HAPPY 16th Sedona!

Meatball Tomatoes

1½ cups diced bread
about ¼ - ½ cup milk to soften bread
4 large beefsteak tomatoes
salt/pepper
olive oil
1 T fresh thyme, chopped
1 t fennel seed
¾ pound ground beef, pork, and veal mix (or your favorite combo for meatballs)
¼ cup grated onion
2-3 garlic cloves, chopped or grated
½ cup loose packed flat leaf parsley, chopped
½ cup grated Parmesan cheese
1 large egg
½ cup Panko or homemade bread crumbs
1 pint grape or cherry tomatoes, quartered
½ pound ball fresh mozzarella, cut into small dice
12 leaves fresh basil, rolled and thinly sliced

Preheat oven to 350º. Soak bread in milk. Cut about ½ inch off the tops of the tomatoes and scoop out the seeds and heart of the flesh. Drizzle cavity of tomatoes with olive oil, season with salt and pepper and thyme. In small pan add about 1 T olive oil, and over med-high heat add fennel seed, stir then add meat and lightly brown. Season with salt/pepper. Add grated onion and garlic, stir 2 minutes more. Transfer to bowl and let cool.

Squeeze the excess milk from bread and crumble into the cooled meat. Add parsley, half the grated cheese and the egg. Fill the tomatoes with the mixture, cover and bake 20 minutes. 
Toss panko or homemade crumbs with 2 tablespoons olive oil and combine with remaining cheese. Top tomatoes evenly with mixture and bake 12-15 minutes more until lightly golden brown on top.
Combine chopped cherry tomatoes with mozzarella and basil, and combine with fingertips.  Serve tomatoes in shallow bowls topped with some of the tomato-mozzarella-basil salad.

Read a Book Day is today. Take time out of your busy life, and relax with a good book. Cozy up on a chair, indoors or out. It doesn't matter where you read that book, as long as you can do so in a comfortable manner. If you doze off along the way, we won't tell anyone.
Reading is a great lifetime hobby. It offers so many positive attributes. It's relaxing and therapeutic. It's educational. Its entertaining. And, a whole lot of other good things, too.  
If you have young children, or elderly people in your home, take the time to read a book to them today. It is a wonderful time to bond with them and it creates pleasant, lasting memories.

Love Read A Book Day. It's everyday with me. I bring down my book and when my work is done (or not:) I sit in my big comfy chair and read. Very often I do fall asleep. :) Then when Matthew is finished with his homework I have him read to me from his book.I would be lost if I didn't have a book going all the time. I got my love of reading from my mother as she was the same way.

Interesting seeing the graduating class. That group photo of Jerry's class looks just like John's class. I think he was Class 110 but not sure. I will have to ask him. That academy was really tough back then!

You are right, the academy was tough back then. Jerry compared it to Marine Corps bootcamp!

Yes back then they had Marines training with them. Jerry was right. Like Marine bootcamp. John's DI used to csll him a donkey! lol
He spent hours and hours using Mennin Skin Bracer on his shoes to get them to shine shine shine.

I still have his notebook from the academy and it's, no kidding, about a foot thick!
That was back when they had such high standards! No more.
