Cinco de Mayo (I LOVE mayonnaise!) ~ Michelada ~ Mexican Shrimp Cocktail ~ Mike & Jennifer ~ Nachos, Tacos, Margaritas, and More

Cinco de Mayo... the REAL story...

(Spanish for "fifth of May") is a celebration held on May 5. It is celebrated nationwide in the United States and regionally in Mexico, primarily in the state of Puebla, where the holiday is called El Dia de la Batalla de Puebla (English: The Day of the Battle of Puebla).The date is observed in the United States as a celebration of Mexican heritage and pride, and to commemorate the cause of freedom and democracy during the first years of the American Civil War.In the state of Puebla, the date is observed to commemorate the Mexican army's unlikely victory over French forces at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza Seguín. Contrary to widespread popular belief, Cinco de Mayo is not Mexico's Independence Day—the most important national patriotic holiday in Mexico—which is actually celebrated on September 16, or as we used to say, the day the new Chevy's came out!

So make some Margaritas, have some rice and beans, guacamole, pick up some tamales... traditional Mexican dishes. Celebrate with our Mexican friends a special day.



Spicy Beer Cocktail (Michelada)
A great cocktail for Cinco de Mayo!

Smoked sea salt, as needed
1 T pickled jalapeño juice
¼ cup store-bought spicy salsa, puréed until smooth
¼ t. salt
juice of 1 lime
ice cubes
1 (12oz) Mexican beer
1 pickled jalapeño for garnish
Spread the smoked sea salt on a small plate. Dampen the rim of the chilled 12 oz glass with water and press the rim into the smoked salt to coat the edge.
Add the pickled jalapeño juice, salsa, salt, lime juice, and ice cubes to glass. Top with beer and stir. Garnish with the pickled jalapeño and serve the remaining beer on the side.


Mexican Shrimp Cocktail

2 pounds cooked shrimp, peeled, deveined (get shrimp from USA only!)
1 T crushed garlic
1/2 cup finely chopped red onion
1/4 cup fresh cilantro, chopped
1 ½ cups spicy V-8 or tomato & clam juice cocktail
1/4 cup ketchup
1/4 cup fresh lime juice
1 t hot pepper sauce, or to taste
1/4 cup prepared horseradish
salt to taste
1 ripe avocado - peeled, pitted, and chopped

Place shrimp in large bowl. Stir in garlic, red onion, and cilantro. Mix in juice, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Gently stir in avocado. Cover and refrigerate 2-3 hours. Ladle into bowls. Serve with corn chips.


Yesterday afternoon Jennifer and Mike came over for wine. It had warmed all the way to the 60º's, but we opted to sit inside instead of on the porch. Dude is totally in love with Mike and won't leave him alone. Even Bruiser jumped up in his lap for a minute!  We had a nice chat. The movie The Lone Ranger was on, as I was taping it, and it looks so so so weird! Johnny Depp is Tonto. UGH.

I will watch it, but so much of it looked so over the top....
I loved the old Lone Ranger with Clayton Moore and Jay Silverheels and of course "Hi-Yo Silver" !!!!!
