Epiphany ~ Alex ~ Roasted Vegetables w/ Steak


Good 35º supposed to rain today morning.
Yesterday it warmed to a no-shorts 40º. Sun? No.

Just so you know this site is acting up something terrible and I am at the end of my rope with Google Blogger and am looking for a new site for my blog. Nothing will line up properly and everything is bouncing around.

Dinner last night was roasted Brussels sprouts, roasted beet, roasted bell pepper... all tossed with olive oil, lemon juice, lemon zest, garlic powder, sea salt, and citrus pepper. Roast at 400º 25-35 min. After the veggies had roasted about 20 minutes I added the leftover filet, cut up. It stayed nice and tender and moist after 15 minutes in the oven with the veggies. (P.S. when you peel and slice beets you will have pretty pink hands!)

As when I cut up jalapenos I believe rubber gloves are called for when cutting up beets. Does that pink last very long? When I think of fresh beets I can't help but remember Judy's panic when her pee turned red after eating them! :)

Everyone, thanks re Alex! She is a very special girl.

As for Wordpress, I tried that before blogspot and didn't like it. Now looking into Xanga and a couple others. My Space has changed totally. Frustrating.
