Brian & Jen ~ Anne, Becky, Mike, Pete, Patrick ~ Washer ~ Bruiser ~ Chicken Enchilada Pasta

Good 45º major cloudy morning.

45 days left until the end of the year. Ya think it could go any faster!!!

Today is Brian and Jen's 9th Wedding Anniversary! HAPPY ANNIVERSARY KIDS!!! Beautiful and fun wedding .. and what a fantastic family you have now! Love you all! ♥♥♥♥

I missed my friend Trish's new daughter-in-law's birthday yesterday. HAPPY BIRTHDAY BECKY!!!
Becky is a multi-talented gal, knits/crochets hats that are ADORABLE! She is the one who made my red/white/blue scarf that Trish gave me for Christmas. She also decorates shoes and makes tote bags.... If you are on FB take a look...

Today is also the birthday of a couple of retired LASD friends.... Mike Nelson and Pete Moreno. It's also the birthday of my pal Sandy's son Patrick Kraut... a Sgt. for HPPD. HAPPY BIRTHDAY GUYS!!!

Yesterday we finally got a few moments of sun. A Vitamin D Happening!!!!

The turkeys thought yesterday was "I'm So Pretty Day".... Look at me girls.....


And my new washer arrived... totally different from the last one. Electronic! Strange noises. Did a good job though! First one lasted 20+ years (gave it to one of Brian's teachers when we moved), second one lasted 15 years, and this one will probably last 10!!!


Bruiser (or as Jeannie calls him, "The Bruise"!) is still at the vets, no surgery yet, some improvement, temp down a bit, licked food off the doc's finger, pee'd. Doc called me about 7pm last night. He will have more tests today for tick something-or-other. He came out negative for feline problems. Keep your fingers crossed! I want that little guy better!

 
Leave it to Harry Reid and the Dems who don't want information exposed as to the inept help that occurred in Benghazi!!!

That "Mexican" stir fry I made Monday night put me on the trail of more with those flavors. Found this on Beth's site, www.budgetbytes.blogspot.com  Next pasta dinner will be
"Beth's Chicken Enchilada Pasta" ......


2 T vegetable oil, 1 medium yellow onion, 2 cloves garlic, 1# chicken breast*, 1 cup enchilada sauce, 1/2 cup sour cream, 12 oz pasta, 1 cup shredded Monterey Jack cheese, 2-3 green onions.


STEP 1: Dice the onion and mince the garlic. Cook both in a large skillet over medium heat with vegetable oil until soft and transparent (about five minutes). Meanwhile, slice the chicken into thin strips. Add the chicken to the skillet and cook until no longer pink (5-7 minutes).
*I would cook the skinless boneless chicken thighs in the crockpot with enchilada sauce, low 8 hours, red or green.
STEP 2: Warm up canned enchilada sauce. Whisk in the sour cream. Set aside. Shred the Monterey Jack cheese (if not shredded already) and slice the green onions.
I would use red or green La Victoria enchilada sauce.
STEP 3: Cook the pasta according to the package directions and then drain well in a colander. Combine the pasta, sauce, and chicken mixture either in the skillet (if it's big enough) or in the pasta cooking pot. Taste to see if you want more salt or other seasonings. Sprinkle with shredded cheese and sliced green onions. Serve warm.

I use to have a cat that sat pretty much just like Jans. So funny!!!!
OMG, that Chicken Enchilada Pasta looks so yummy. Look at all that CHEESE. YEAH!!!
"The Bruise" is going to be great. I know how much you want him home, and he sure is lucky to have found you!
Yikes is right with the Waterston eyebrows. Needs to lighten them up a bit.

Oh my God- I can't believe those tats! What a nut!

That pasta dish is a must! I wish I didn't already have drunken pork chops planned for tonight.I bet the pasta leftovers would be heaven!

Thanks the the feature on Becky! will send her your blog. Had fun last night celebrating her birthday and their one month anniversary at the scene of the crime as Daryl says. Coco Palm.

When I got a new washer I was horrified by how loud it is. My mom's new wazoo one sounded like a thrashing machine too. No sound proofing in the lining anymore I guess.

Thinking of Bruiser. Hope he comes home soon.
