RR Homecoming ~ Eric ~ Plumber ~ Stuffed Red Peppers


Good 50º drizzly morning.


Yesterday I had to make a run into town for my meds, Maggie's meds, chicken and stuff from the grocery store. As I passed the high school (on my road) I realized the Homecoming Parade was going to happen soon and last year I got stuck behind it coming back from town. I RUSHED! Hurry hurry hurry...... Made it in the nick of time! As I headed home, here comes the floats.....




They went to their staging area, probably the market parking lot, and then when everyone was ready and on the floats, band in place, or whatever else, then they came 1 mile an hour back out our road to the high school. You can't pass. So it takes you FOREVER to go the 2 miles!


Started drizzling yesterday late afternoon and heard it on and off all night. I felt really bad as it was the homecoming game at RR High and the dance. Fuey on a rainy night for those kids! :o(


I did have my first fire for the year in my wood stove.
 
OH SO SNUGGY~!!!! Loved it. In all we got about 1/4".

I just found out that my friends Trish and John's (Bowler...LASD ret) 2nd son had his birthday yesterday. Wow, Eric, 40 big ones!!! HAPPY BELATED BIRTHDAY!

Look, you are even smiling! Funny, your birthday is 10-19 (Return to your station! See the irony in that???LOL Makes your mom a happy person!)

Yesterday, actually Thursday, my kitchen sink stopped up. It would finally drain out, but took FOREVER. Called Mike the plumber yesterday morning.
His mom, Susan, runs the office and she said Mike could come by on is way home. He had a full day. Handy that the plumber goes past your house on his way home!!! Mike got here about 5:15 and by quarter to six he was on his way home. Yeah, sink running good again! Need to get some new plumbing done under there before I get a new dishwasher!

 

OMGoodness.... Biden vs Biden... a heartbeat away from being the President.... probably the most important leadership position in the world! And... he's a full-fledged dufus!

So, the other night I decided on a concoction to stuff some sweet bell pepper with....

Into the rice cooker went a cup of Sprouted Rice & Quinoa blend, some baby grape tomatoes, some baby carrots, and broccoli slaw. Added water and let it cook. In the meantime I soaked the dried mushrooms with the dried red onion.


When the rice mixture was finished cooking I added in some thawed frozen spinach, drained and rinsed black beans, the mushrooms and onion, ricotta cheese, and parmesan cheese.


I stuffed the two peppers, drizzled olive oil over them, added a 1/2 " of water to the pan and baked them at 350º for 40 minutes.



I have leftover rice mixture so will have that as a side or cook some white fish and serve it on top. Really good mixture. You can just use plain Quinoa or.... a rice blend or just white rice. Saute some celery and mushrooms, add minced garlic, the rinsed black beans, canned diced tomatoes, grated carrot, grated cheese of any kind, and a little cumin for flavor. Experiment! Stuffed peppers don't always mean they have to contain cooked ground beef... add some canned tuna or chicken or salmon. Be brave!

L, let me say amen to that! I was in the Los Angeles Sheriff's "Boy's" Band (5 girls, 2 carried the banner, and 3 of us played the glockenspiel!) and we marched behind the Sheriff's Mounted! Trust me,white boots? Ha!!! Not after a parade!

Re: Christmas Countdown - Yikes, Sue, don't do that again! Only 65 days until Christmas - scary!!! I haven't even thought of Thanksgiving yet!! But just so I won't forget I put the URL on my favorites bar. I guess I should start planning on what to bake for Christmas so I can start stockpiling the ingredients. I know I'll need lots of butter and nuts, plus some other stuff - yikes!
