PJ's Birthday ~ Roasted Garlic Pasta Salad ~ UFO Day



Good 52º sunny morning. Heading for 'hot' today....


Yesterday morning looked like this... but no rain.

Yesterday we had a little gathering for PJ's birthday...

Pat C and Tim showed up later... they had been river rafting. Good thing we had food left!!!

Good food. Dave barbecued ribs, PJ made coleslaw (yummmy!), Mike brought some outrageously good strawberries and blackberries, I made a pasta and a potato salad, Pam made cheesecake, Tom made pumpkin and lemon pies. Oink oink oink.....


Re the pasta salad.... I got this recipe from Beth at Budget Bytes (www.budgetbytes.blogspot.com). She served hers hot, I served mine cold. Really good. A big hit!

This is neat, because I have always roasted garlic in the oven. In the summer it's nice to not have to turn on the oven and you can roast the garlic right in your microwave! Yeah!

First cut the top off two heads of garlic... put in a microwave safe dish, drizzle with olive oil, put microwave safe top on and cook on high for 1 minute. Check. Cook 30 sec longer. Check. Mine cooked in 1 min 30 sec. Some are good at 1 minute. Some 2 minutes. Sometimes the cloves jump out...

Be careful, cooking too long and not checking it may lead to burned garlic. YUCK.




Remove garlic from heads and chop, add to that some salt, black cracked pepper, and 15 oz of ricotta cheese....



Cook the pasta in boiling salted water (I also added Sonoma pepper and Chile con Limon). When pasta is done, drain .. reserving 1/2 cup of the starchy cooking water, and cool the pasta with cold water, drain. Add the cooking water to the ricotta mixture and with a whisk stir until smooth. In a large bowl add the pasta, some baby spinach, shredded Parmesan cheese, halved grape tomatoes,....

Stir in the ricotta mixture and refrigerate until serving time.
This would also be good with added bell pepper and/or celery and maybe some peeled cold cooked shrimp!
