Brian's Burger ~ Garbanzo Bean Salad ~ Pork Chops ~ Corn on the Cob ~ Adobo


Good 60º sunny morning. Hit about 93º yesterday. Today should be a bit warmer. UGH.
 
 



Brian Jen and the kids are over camping at the coast. Brian took a picture of his hamburger he was having for lunch at the pier in Brookings.... made me drool.....

Hamburger bigger than the bun and bacon. OMG. He said Jen had mushrooms and onions on hers! How cruel. LOL.

 
Yesterday was mundane. Laundry, crockpot chicken for Maggie, making cards.... until dinner. That was fun!

First I made a watermelon martini. Put seedless watermelon into food processor and liquefy. Strain through fine strainer or coffee filter. To 4 shots of watermelon juice add 2 shots vodka, 1/2 shot triple sec, put in martini shaker with ice and shake well. Pour into chilled glass.

Scrumptious!


Next I put olive oil in a big frying pan, coated the pork chops well, filled the pan with water, brought to a boil and simmered until all the water was gone. Then I added a bit more oil and fried those babies crispy.

 
I made a garbanzo bean and spinach salad....
1 can garbanzo beans, drained.
1 60z package baby spinach
1/4 cup diced red onion
1 T. balsamic vinegar
3 T. olive oil
about 1 t. dry adobo*, to taste

In a large bowl toss together beans, spinach, & onion.
Pour vinegar into small bowl, using a whisk, slowly drizzle in oil, whisking constantly until combined. Season with adobo. Pour dressing over salad, toss to coat evenly.

I cooked some corn on the cob. Put about 1/3 cup vinegar in cooking water and corn will stay crisp and not get mushy.

Then I mixed some shredded Parmesan cheese with BF mayonnaise and slathered that on the corn.
Salad was soooooo good, corn perfect, chop was crispy on the outside and tender inside. Awesome!

*Adobo recipe....
6 T salt (I use sea salt)
6 T granulated garlic
4 T. oregano
2 T. black pepper (I used Sonoma citrus pepper)
2 T. turmeric
2 T. onion powder
I put it all in my Bullet mixer (or use a blender) and basically processed it until a smooth blend. Will keep well in a tightly sealed jar.

The adobo dry mix seasoning can be sprinkled directly onto the meat or into beans, stews, and rice.
Onions, olive oil, lime juice, sour orange juice, or vinegar are added to create wet rubs and marinades. For maximum flavor, the meat is allowed to marinate in the refrigerator overnight.
