Easy Cheesy Chicken Casserole ~ Atlas Birthday ~ Elk ~ Swallow ~ Tormented French Cat ~ New Coffee Maker

Good 35º frost on the roof morning! This is exactly why we don't plant tender plants (tomatoes) before the 1st of June!


Today is a special birthday... my Granddog Atlas. Happy Birthday 11 year old!

Last night at dusk a whole herd of elk, 24, showed up in the recent mowed pasture. There were a couple spikes (young bucks) laying in the grass at the top of the hill and three calves, and the rest appeared to be cows. It is really hard to get pictures in this light....

I was also watching the tree swallow in her nest box...

On the porch in the birdhouses we have sparrows, blue birds, and the swallows. All fun to watch.

I tried out my new coffee maker and it works spectacularly! I brewed 6 cups of tea in the carafe and later, 1 cup of coffee in the 1 cup brew side. Perfect! The coffee filter for the 1 cup side is also a scoop for the coffee. Also, it has a raised cup stand if you use your own coffee cup instead of the insulated 'go away' (travel!) cup.


Nothing to report going on around here. Back acting up so didn't get any mowing done. Today!

Easy Cheesy Chicken Casserole!

Serves 8 to 10
3 to 4 cooked chicken breasts, chopped
16-oz. pkg. wide egg noodles, cooked
24-oz. container sour cream
2 (10 3/4-oz.) cans cream of chicken soup
8-oz. pkg. shredded Cheddar cheese
8-oz. pkg. shredded mozzarella cheese
1 sleeve round buttery crackers, crushed
1/4 cup margarine, melted
2 tablespoons poppy seed

Combine chicken, noodles, sour cream, soup and cheeses in a large bowl. Pour into a lightly greased 13"x9" baking dish. Mix together cracker crumbs and margarine; sprinkle over top. Sprinkle poppy seed over cracker crumbs. Bake at 350 degrees for 25 to 30 minutes or until crackers are crispy and golden and cheese is melted.

Several special days rolled into one....
National Bike To Work Day - Always the third Friday in May
This is a great opportunity to get some exercise, and to save gas.

National No Dirty Dishes Day - Always on May 18th
This day is a reprieve from the daily pile of dishes to wash and dry. Day after day, we do the daily chore of washing and drying dishes, then put them away in various cabinets and drawers. We perform this task after each and every meal, and often after snacks. Even putting them in and out of the dishwasher and running it, can be a chore.

You deserve a break from this routine. And, today is that day. The objective of this day is to have no dirty dishes. It is not intended to pile them up until tomorrow.

We can think of two ways to avoid dirty dishes today:
1. Use disposable plates, cups and silverware for all meals and snacks.

2. Take the family out to eat all three meals. Then for snack, go out for ice cream!

We strongly recommend that you do not pile up the dishes to do tomorrow. This defeats the purpose of this very special day.

Visit Your Relatives Day - Always on May 18th This day encourages us to visit our relatives and loved ones. This day is intended to give us the opportunity to get closer to our relatives, and to build (or re-build) family ties and relationships.
It's easy to get out of touch with loved ones. We lead busy lives. A visit with the relative, is sometimes relegated to Christmas and a few other choice major holidays.
If you can not visit your relatives today, we suggest you call them and/or send them a card. Both snail mail and online cards will do.

Gosh, you had quite the herd last night didn't you? Too bad they weren't goats, that way you would not have to mow. Ha
Sure glad your spiffy coffee maker is working out for you. I really like the one cup idea.
Dwayne Hickman sure hasn't changed much has he? Pernell Roberts on Bonanza, mmmmmmm sure was nice to look at. That being said, off to start my day. As always, thanks for your hard work on your blog. xo

What a nice suggestion to contact relatives. The casserole looks like nirvanna.
My brother in law introduced our boys to Reggie Jackson when Eric was first called up. The son of a tailor- Reggie wore his uniform like it was his tuxedo.

Enjoyed the story of Aimee McP. She sounded like she was a piece of work! Sounds like she did some good deeds but what put me off was before passing the collection plate she would say "no coin please"! What a beotch!!

Love your herd in your pasture! That is amazing to me! I keep thinking you have it all fenced in!
I will put that recipe in my notebook. I would make it for tonight but don't have any buttery crackers! :(
