Miso Soup ~ Eaglets ~ Manogram ~ Pineapple Upside Down Cake


 

Good 53º foggy morning.


First thing, 8:30, the Trees Inc guys will be here to do the trimming under the electric wires. We had a discussion yesterday re the truck they use, with a cherry picker bucket, and I told them they can't take that truck out to where the trees are because the ground is too mushy and they will either 1. get stuck or 2. tear up the ground. They assured me they would keep the truck on the gravel road and climb the trees to trim them. Ok, fine. We'll see.


Yesterday it rained on and off and on and off.... got another 1/4"...


Supposed to be sunny (?) today. LOL.

 

Oh boy.... I'm guessing Caroline Kennedy is having a fit over this....

 

Yesterday I made miso soup....First, when I cook a chicken in the crockpot I save the drippings in the bottom, it turns into a gel when cool. I mixed the chicken gel from two crockpot chickens (I make one a week for Maggie) which was about 4 cups, and mixed that with a box of low sodium chicken stock. When it was hot I added in cut up chicken breast and a cut up leek and carrots and about 6 sliced cloves of garlic and let it simmer for an hour....





After the soup simmered for the hour I added in cut zucchini, mushrooms, and tomatoes.... let simmer another 30 min and add 1/2 cup of miso paste.... then.... just because ... I added about 1/2 cup of the spinach pesto!

AWESOME soup!


Wow, the eaglets are really growing!

Boy, did that picture of the pineapple upside down cake ring my chimes and push the drool button. I still have the cast iron skillet Mom used for making them. What a yummy treat...we used to fight over who would end up with a cherry. :) In those days of no cake mixes and very few bakeries all the baking was done at home...no store cought nuttin'. Thanks for triggering a good times memory. XO Edda

Very interesting about the book re Kennedy and Mary M. There are so many mysteries in the past, especially surrounding Kennedy's death. Guess we will never know.

Your Miso soup looks good. Reminds me of the cabbage soup I make when I decide to diet. Think I will make some soon! :) What's funny is in the diet it says to not eat it alone for more than a week because you will get malnutrition. No meat in it. Here I thought vegetarians were supposed to be so healthy!

The pic of Hitler surprised me that Eva Braun (sp?) was such a pretty woman.

mmmmmThat pineapple upside down cake sure looks yummy. Hope John doesn't see it! :)

@ E, you are going to have to make this cake. The link is Betty Crocker but the cake is from scratch, not a mix.

What does miso taste like?

Sort of hard to describe .. it's a paste made from white rice, soybeans, and sea salt. Sort of has a little bite to it, but the flavor is like mashed soybeans. Not a lot of flavor. It tends to add a depth of flavor to soups, sauces, marinades. Some people smear it on chicken or fish before baking/broiling/barbecuing. Traditional Japanese miso soup is made from a broth of bonito shavings and kelp ... a clear broth with miso paste added.

Thanks for the laugh about the manogram. Men have no idea what we go through. Understand kidney stones are much harder for them to pass. Ha! Eaglets are awesome. We were fortunate to see so many eagles when we traveled around Alaska. The natives call them scavengers. Pineapple upside down cake was Gil's Dads favorite because he didn't like frosting.
