April Fools ~ Retraction...or maybe Addition ~ Green Pea Salad


Good 34º somewhat cloudy morning. Only .54" since yesterday. Rain tapering off. Windy yesterday. Seems calm so far today. 27º in Grants Pass. About 20 elk up in the
pasture this morning.

Ok, so it's April Fool's Day. Mixed emotions about this. Jerry's brother called on April 1st and told him his dad had passed away. Jerry thought he was pulling an April Fool's joke. Not. Sad. But, I do recall switching the sugar out of the bowl and replacing it with salt when I was a youngster. Sure made my mom's coffee taste awful!

Rain continued most of the day. Then it stopped for a few hours. About 2:45 it started in again. I watched the turkeys shake lots of water out of their feathers today. Poor things. In the afternoon it got WINDY! Wow! Rain blew against the windows a lot!

Patty asked me about a Pea Salad recipe last evening so thought I'd share this one again with you.. It was my sister Marion's favorite...

2 pkg frozen petite peas, thawed to room temp (or 16oz bag)
4 stalks celery, chopped
green onions, chopped or red onion (your preference)
3 hard boiled eggs, grated

Mix with about 1 cup mayonnaise, mustard, salt, pepper, and garlic powder. Sometimes she added a jar of red pimentos, drained and/or a can of chopped black olives.

Also, I like to add about 1/2 cup Parmesan cheese and crumbled bacon. Or... add shredded cheddar or mozzarella cheese or a combo of cheese....

National Sourdough Bread Day
I have two favorites....



I order bread from them occasionally. Great gifts. Whenever I've been in the San Francisco airport I always buy a loaf to munch on. Nothing else needed!

.... then there is Ashland Sourdough, awesome bread, which sadly I just learned the Apple Cellar Bakery in Ashland that made it is now closed.
This is soooooooooooooo sad.

You forgot one more "Pat". Even tho I don't go by "Pat" anymore I used to. I have always preferred Trisha but in all my school days I was known as "Pat". ug!

Today I will be making another St. Pat's Day dinner. Bought three corned beefs when they were on special.

Love the pea salad! Will have to make that one soon.

OMG!! I hadn't thought of the pea salad for Easter dinner but you are right! It would be perfect! I will copy the recipe and plan on it!
I will shop for Easter groceries later this week and get something for Becky since she can't eat ham.

yesterday...3 jars. Yumm. I haven't made anything
with it yet, maybe today, but did taste a tsp full. Wow!!
What kind of sandwiches do you use it on? Thought
I'd better find out, so I don't sit and eat it out of the
jar !!! ha ha Cyndi

Wonderful Cyndi!! I like it best on plain lettuce and tomato sandiwiches with those 100 calorie buns. Good in deviled eggs and awesomeo on hamburgers. You will have to experiment! xo

Thanks bunches for your Sister's Pea Salad recipe today.....it reminds me of the one the old Jolly Roger Restaurant across from Disneyland used to serve on their salad bar when we held Sales Meetings there, Have made many attempts to duplicate it over the years. This recipe comes very close...one thing I'll add to the BF Mayo is sweet curry powder...I'm pretty sure that was made the dressing taste so good. I'll have to fiddle around with the qty. required. It had green onions, boiled chopped eggs, crumbled bacon, sometimes red onion finely minced. I'm making this to go with Easter Ham next weekend.

Yes, Sandra... they were sold and then they closed up. I know. Too sad. There may be another bakery in Ashland making the artisan breads, I'll check. ox

I asked my friend Kerry Dotterer, she lives in Ashland, and she said this...
The Village Baker specializes in many wonderful flavored old world breads and certainly has sourdough. It is well worth the stop to pick some up. You might call and see what day they make what you want so you get the freshest. (488-0062). They don't cook evey bread every day.
