Simple Salmon Casserole ~ Brenda Myron ~ Girl Scout Cookie Shooter!


   

Good 32º cloudy morning.

There is sun on the summit, not here, that's for sure!

.... boy, the California side doesn't look too inviting!


Yesterday I decided to clean out one shelf in the kitchen. LOL. I ended up cleaning out the whole cupboard with canned goods and the whole spice cupboard! Got a lot done and happy with the results. Some canned goods in there expired 5 years ago and I'm sure in the back some were older! All gone now!


Rained on and off all day yesterday. Every time I was ready to take the trash out to the road, it started pouring, and as quickly it stopped. Sun. Rain. Sun. Rain. Weird day.

 
Speaking of canned goods.....
If you like canned salmon you will like this simple easy dish. A glass of wine and a green salad.... voilá .. dinner.

 
Cooking spray
2 cans salmon, drained
2 tubes of crushed (not too small) saltine crackers
milk or fat free 1/2 & 1/2
butter

Spray casserole with cooking spray. Layer salmon and crackers. Pour milk or 1/2 & 1/2 to cover and dot with butter. Bake uncovered 350º for about 45 minutes to an hour .. although check it! When browned it's done!

(A good addition is 1 or 2 shredded zucchini)

Or... use 1 can of salmon, 1 tube of saltines... smaller casserole dish. This was a favorite of Avalon Fire Chief, Jack Goslin.


Last night I got a good fire going, fixed leftovers, and Maggie and Harley and I watched "Father of the Bride". Fun movie. I told Jeannie it was FofthB2 but it was the first one. The house they used is in N. Alhambra ... Alamansor Street? I think. And the outside shot of the church was the Congregational Church on San Gabriel Blvd where Jerry and I got married. Good movie. Good memories.

Yes, she makes a mess, but then quickly cleans up and eats the crumbs! Good girl!

Today is also the birthday of a friend, Brenda Myron, who passed away too soon. She was the wife of Paul Myron, ret LASD. Brenda was the sweetest gal and so much fun. RIP Brenda, you are missed by everyone who knew you!

Girl Scout Cookie Shooter:


 
 
 
 
 
 
 
 
 
1/2 oz Kahlua
1/2 oz Bailey's Irish Cream
1/2 oz Peppermint Schnapps

Pour the alcohol in a cocktail shaker filled with ice. Shake until well mixed and strain into a tall shot glass.

John rarely drinks anything alcohol but when he does lately he has a White Russian.

Your salmon casserole sounds so easy for those who enjoy salmon. I fixed salmon the other night and the only ones crazy about it are Eric and Becky. I think the older I get the less I like it. Jeeeze and here I have a freezer full of the stuff! :(

Try the casserole Trish. Take some of that salmon in the fridge (it's raw, right?), break it up and cook it in a frying pan with a little smidgen of olive oil, or bake it. Then make the casserole .... xo

Cassarole could be done with Tuna or Canned Chicken too for a variation.. Yummo with Salmon for sure...!!! LOVE the Girl Scout Cookie Shooter... Will add that to my collection of GS cookie recipies to enjoy.
NOTE: March 12th, 2012, will mark the 100th Birthday of Girl Scouting in the USA, Founded by Juliette Gordon Lowe. Will have to have one of these to toast on that day for sure...!!! Thank you for your support of Girl Scouts..!! :-)
