Mr. Buck ~ Leftover Soup ~ PB Fudge ~ Gingerbread Cake


   
Good 37º morning. Rain on the radar.

Yesterday was one of those frustrating ones.... it put me in a bad mood, and whenever I am I think of the 1989 movie Steel Magnolias and how Shirley McLaine (Ouiser Boudreaux ... pronounced "Weezer) had been in a bad mood for a long time. Her exact words were, "I'm not crazy, M'lynn, I've just been in a very bad mood fer 40 years!"

LOL.

Anyway, the charger on my golf cart wasn't working, I couldn't get my little laptop to log onto the wifi, and Harley was being a real pain in the whoo whoo! So, worked on the charger and got it to working. Yeah! Then I tackled the laptop. Grrrrrrrrrrrrrrrrrrrrrrrrrrrrrr............................still won't log on. Harley's mood improved. Then in the late afternoon I watched Toy Story 3. That was hilarious. Made me laugh. Bad mood left!

I made the peanut butter fudge yesterday...
 



 
The only things I did differently from the basic recipe was add a couple pats of butter and I used half milk/half cream. Addictive!

Had a few visitors yesterday out back...


Mr. Buck came back.....

He was chasing a doe away... why, I don't know!


And instead of reruns of the mac/cheese/beef/veggies I put a carton of chicken broth in a pot, added the leftovers, and made soup. It was HEAVEN!!! Really a great idea. Wonder why I never thought of that before!~

It was a pretty day with the sun playing hide and seek...
 
All I know. Nuff said. Happy Monday. ICK....trip to the Doc today. Too much falling apart on this old bod! LOL

Gingerbread Day

Used to make gingerbread cake for my Dad because he LOVED it!
Caramel Apple Gingerbread Cake (so easy!)

1 package (14.5-ounce) gingerbread mix (Betty Crocker)
1 can (21 oz.) apple pie filling
1/4 cup caramel-flavored ice cream topping
Sweetened Whipped Cream

  1. Heat oven to 350°F. Lightly grease a 9x9x2-inch baking pan; set aside.
  2. In a large mixing bowl prepare gingerbread mix according to package directions. Fold the apple pie filling into the batter.
  3. Spread batter into prepared pan. Bake for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.
  4. Let cool about 30 minutes. Serve cake with caramel and whipped topping. Makes 9 servings
