Debbie's Fiesta Party ~ Taquitos ~ Taffy ~ & Turtles !

Good 43º cloudy morning. Yesterday started out like this but cleared up and was beautiful....but windy!
Only 222 days left in this year.

Saturday I made a dark double fudge chocolate cake and a lemon cake. Both for the "Fiesta a la DEB-".

Then yesterday I made taquitos and guacamolé. Easy .. mix ground beef with chopped onions and taco seasoning or cumin and salt and pepper, garlic powder and onion powder. Heat vegetable oil in pan to just under sizzle. Put the corn tortillas in a folded dish towel and heat 1 minute in the micro. Keep in towel as you work to keep them pliable. Lay out a tortilla, lay the meat in the tortilla at one end and roll up tight. Set taquitos on a plate until ready to cook. Brown on all sides and set on paper towels to absorb oil.

Here are a few pictures from the Fiesta yesterday at Dave and PJ's. It was to celebrate DEB-'s  55th birthday:

PJ made a heavenly casserole with corn and beans and cheese and  Mexican Cornbread. Patty make her famous hot
carrots and a GREAT tamale casserole and salsa. PatC made pork taquitos and brought limes, salt, tequila, and Margarita mix.
I made Deb some

 earrings and got her a

Fifty five is the age when we can really start having fun!

Except- It just doesn't look like Joan Collins would enjoy aging. It looks like she battles it.
