Wind ~ Scam Phone Call ~ Interesting Restaurant Names ~ Bacon Seasoning ~ Pumpkin Dump Cake


Good 30º everything out there frozen morning clear morning.

Stayed cold and windy all day yesterday and we got up to the 60º's.


I have a carport that is made of metal and next to it is an oak tree. The wind was blowing so hard and the acorns were flying off the tree and hitting the carport and it sounded like gunshots! Bam bam bam bam bam....


Yesterday, since it was the Friday the 13th, I stayed home!
So then, I get this phone call from a 336 (No. Carolina) area code and all the ID says is "out of area".
Then a female voice leaves a message, "Ignoring this message will be a second attempt to avoid an appearance before a magistrate judge or a grand jury for a federal criminal offence. Do not disregard this message and return this call now. If you don not return this call or your attorney then all I can do is wish you luck."

GOOD LORD, do people really fall for this crap????

Our Senior Leadership class in high school went to Pepperdine University to see President Eisenhower receive an honorary degree. I got to shake his hand. OMG, he seemed larger than life and his hands were HUGE! He was very pleasant.

Later for dinner I cooked some Omaha Steaks Breaded Coconut Shrimp in the air fryer (still frozen, drizzle with olive oil, 370º, 15 minutes). I made a dipping sauce with mayonnaise and bacon seasoning.

This comes from Australia. It is so good and can be mixed into anything you like or sprinkled on top. If you like bacon, you would love this!
.... and I put some baby carrots in a dish, put in some water, put in microwave, covered with my "splatter guard cover"

and cooked on high for 5 minutes.

    PERFECT!!!!

Today is Dessert Day so here's a quick easy Pumpkin Dump Cake recipe....

 
1 large can of pumpkin puree (29 oz.)
1 can (12 oz.) evaporated milk (just plain, not sweetened)
3 eggs
1-1/4 C. sugar
1 tsp. salt
1 TBSP. cinnamon
1 yellow or white cake mix
1/2 C. (1 stick) butter, melted
sliced almonds (optional)
1 or 2 spoonful's sugar (for sprinkling)
Lots of whipped cream for topping


  • Mix together the pumpkin, evaporated milk, eggs, sugar, salt, and cinnamon in a large mixing bowl. Pour into a large cake pan (9x13 or a similar dimension).
  • Sprinkle the cake mix evenly over the top of the pumpkin mixture. Poke holes randomly around the cake with the handle of a wooden spoon. Be generous with your poking. Melt the butter and pour evenly on top of the dry cake mix. Top with sliced almonds, if you like, and then sprinkle 1 or 2 spoonful's of sugar over the top of the butter.
  • Bake at 350 for 50-60 minutes until the top is nice and brown. Check on it often. It may need more or less time depending on the pan you use. The thicker the pumpkin mixture, the more time it will need to cook. If the crumble starts to burn, but the middle is still liquidy, cover with aluminum foil.
  • Top with lots of whipped cream.
