Yesterday afternoon I picked up Sami from school.

 Jen is gone to So. Cal to be with her mom and her brother Jimmy, who is very ill. Tucker's friends mom picked him up and brought him home. Tucker made a smoothie for he and Sami for snack. Then Brian came home and got the kids for Tucker's baseball practice and Sami's gymnastics. Busy dad~!!

Ok, here's an idea in anticipation of Cinco de Mayo...

Tamale Casserole
Anyway, I used a 9x13 pan and 12 tamales. I think 3-6 would work fine, depending on the pan you find to fit them.
12 XLNT tamales (steamed for about 5 min) or use any other tamale of your choice (this recipe makes XLNT tamales GOOD!)
1 can black beans , rinsed
1 can diced tomatoes with lime, drained
1 can diced green chilies
1 can creamed corn
1 med onion, diced
2-3 cloves garlic, sliced
cilantro
grated cheese
1 can black olives, each cut in half ..or a can of sliced black olives...

(there is enchilada sauce in this picture, but I didn't need to use it)
Unwrap steamed tamales and cut each in half. Line the bottom of the dish with the tamales, meat side up....

Next, mix all the canned goods and add the garlic and cilantro (I used a cap full) and spread half on top of the tamales.

Then add a layer of cheese and start the layers again so you have two layers.
Top with cheese and olives.

Bake covered 350º about 30 minutes, remove foil and bake another 30 minutes (until bubbling throughout)....

This dish is AWESOME!

Dinner was Omaha Steaks Pub Style Cod, baked potato, spinach with a drizzle of olive oil and garlic salt. Tarter sauce was Trader Joe's (Mmmmmmmm)  ....

Brothers and Sisters Day is a day to cherish your siblings. Sure, there are times when you love your brothers and sisters. And, there's times when you want to disown them. All in all, having a brother and/or a sister or two, is invaluable. The older you get, the more you learn to appreciate them.
Celebrate Brothers and Sisters Day by touching them in some way.  A card or a phone call is appropriate for those who are separated by too many miles. A visit, or sharing a meal together, is a great way to enjoy this special day.  
Don't have a brother or sister? Become a "Big Brother" or Big Sister". Chances are, there is an organization in your area. And, they need your help.
Brothers and Sisters Day is similar to National Sibling Day, held on April 10th.

Booo I feel left out since I am an only child! :(

You always look like Kristen's sister in your photos together. :)

How scary about that first jetliner. When I was a little girl flying back to Arkansas every summer on the American Airlines DC 7 four engine prop planes I used to dream about a passenger jet. In my vision the passengers would have to wear oxygen masks. :)

LOVE the looks of that tamale casserole but John hates black beans so I would have to probably use pintos.

Thoughts and prayers for Jen's brother. :(

Being and only child, you made up for it T with all your boys!!! I used to fly from Burbank to SF to stay with my sister. The planes were prop and we were served an entire meal during the flight. Nice! But back then they could still smoke on the planes. YUCK~~ Yes, any kind of bean will work in the casserole! xo

Yes, I used to get entire meals on the planes. Breakfast was served on the flight from Dallas or Ft. Worth to Little Rock. Nowadays there wouldn't be enough time!

Yes,I remember smoking on those planes. In fact as I got older I would sit in the smoking section and have a puff too. I only did that one time. I often wondered how that plastic partition would keep the smoke contained in the smoking section! It didn't! So soon they banned it from domestic flights and was allowed on International flights. Of course that's banned now too.

I made the tamale casserole you put out the other day. Have to say that it was good. I made a couple changes (costco tamales, whole kernel corn and included the enchilada sauce to compensate for the lost liquid from the cream corn). I also added srirachi sauce which gave it a nice kick without it being overwhelming.
