Volcano Happy Face ~ Crock Pot Apple Coffee Cake ~ Mutt's Day (Lucy & Dude)


Good 51º clear sunny morning. A few degrees under the previous days, hit 99º yesterday. Should be about the same today.
Breakfast yesterday.... leftover brown rice/veggie/tuna in a bowl, make an opening in the center, add an egg (pierce the yolk with a sharp knife), bacon salt and I Can't Believe It's Not Butter spray. Place bowl in microwave, top with porcelain saucer, cook on high 2 minutes.
               Perfect and OMGOOOOD!

Friday night on the news they showed this picture of the Hawaiian Kilauea Volcano.... LOL! A happy face in the lava!

Another day filled with excitement. First was watering the front and back lawns. Washing towels.  Cleaning leaves off front porch. Filling water tubs for critters. Vacuuming. Found a bunch of old photos so scanned them and put them on the external hard drive. Printer STILL not working! Grrrrrrrrrrrrrrrrrrrr..............

Ok, how about an easy peesey slow cooker Apple Coffee Cake:

½ cup butter, softened and divided
21 oz can apple pie filling
1 cup 3 T light brown sugar, packed and divided
2 T cinnamon, divided
18.5 oz pkg yellow cake mix
2 eggs beaten
½ cup sour cream
½ cup evaporated milk
Optional: ¼ cup chopped pecans
Topping: whipped cream
1.  Take 1 T of the softened butter and spread it all around the bottom and sides of the crock pot.
2.  In a bowl mix together pie filling, 3 T of brown sugar and 1 t cinnamon.
3.  Take ½ of the apple mixture and spread it in the bottom of the crock pot.
4.  In a different bowl mix the cake mix, eggs, sour cream, evaporated milk, 4 T of the butter and the rest of the cinnamon. Mix well.
5.  Gently spread half the batter over the apple mixture.
6.  Repeat layers.
7.  Cut together the remaining butter and brown sugar and sprinkle on top.
8.  If you want pecans, sprinkle them on top of everything.
9.  Place 2-4 paper towels under the lid and cook on high 4-6 hours, until cake is done in the middle.
10. Periodically check your paper towels to make sure they are not dipping down into the cake and remove moisture from the lid.
11. Serve warm with whipped cream.
This is certainly a brunch item, as you don't want to be cooking it 4-6 hours before breakfast! I would cook it, let it cool, refrigerate, and just reheat it before eating.

Later it was chair, wine, and my good old Blue Bloods. Dinner was reruns.

Mutt's Day
Lucy was a mutt... she was a cross between German Shepherd and Collie ..with Kristen in 1969:

She was the MOST loving sweet dog ever! The brat next door in Temple City, Tony, would sit on Lucy and if she was working on a bone he'd take it our of her mouth. She never did anything to him, growl or anything! She was gentle!

Well, so is Dude! He's a cross between Rottweiler and Lab. Taken when I still had my Maggie (Scottish McNab... not a mutt!)

Mutts deserve their day in the spotlight, as much as a pure breed. If you own a mutt, or you are a mutt (reading this), then you know this day is for you.
By definition a mutt, sometimes called a "Half-breed", is a dog that is of mixed breed.  They come from two to several breeds. Purebred owners, and sometimes the public in general, view them as lesser in many ways. Mutt owners know better. They value the diversity and uniqueness of their mutts. Sure, a mutt doesn't carry the expensive price tag that a purebred with papers has on its head. To the mutt owner, however, the mutt is invaluable. In addition, mutts don't walk around needing to prove anything. You won't see them strutting around any dog shows trying to prove they are the best.

To all mutts and mutt owners, we hope you thoroughly enjoy Mutt's Day. Spend the day relaxing and doing all the things you and your dog like to do. Do so with both of your chins held high. For your mutt is worth a million bucks!

Good morning. I never met a pure bread dog until I started dating Gerry. His parents were into dogs worth more than their vehicles- his dad trained hunting dogs and was an AKC judge. I think sometimes, now, my late father-in-law leans over from the heavens, see what the family has now, and exclaims "Those aren't dogs!"

I've had a few pure breads, but you know, doesn't matter what kind of dog they are, they are all GREAT! Ha ha ha, making diamonds, L ... you are funny! xo
