Guacamolé/Deviled Eggs/Taquitos ~ Brian & Jen's Super Bowl Party ~ My Photo On The News (again!) ~ Chinese New Years

Good 38º clear sunny morning. Wow, clear!
Yesterday, under the "supervision" of Bruiser (he has to lay by my feet and follow me to every cupboard and to the fridge!)  I started off hard boiling eggs and then made the guacamolé. I was SO ANGRY at the avocados! Out of 8 I purchased (3 from Safeway that are Calvados, and 5 from Rays... supposedly Hass, but grown in Mexico! ) only 4½ were any good! There were parts of the others I cut off and used, but for the most part, they SUCKED!!!

Anyway, got the good ones mashed, added sea salt, Weber Roasted Garlic seasoning, zest of one lemon and the juice. Then to increase the volume of the guac I added in half a can of drained diced tomatoes and half a can of diced mild chiles.

Next were the deviled eggs and then the taquitos.
For the taquitos I used 40 corn tortillas and 2½ pounds of lean ground beef. I mixed in about ½ cup of McCormick's taco seasoning....

Put 10 of the tortillas in a towel and heat in the microwave 35 seconds, turn them so the middle ones are on the top and bottom, and another 35 seconds. Keep them in the towel and work on one at a time... putting the meat on the edge and rolling up tight. Let them sit while you finish that batch.
Then fry them in hot oil until browned on each side...
Drain well on paper towels.....
Into the Crock*Pot the go, on warm....

Headed to Brian's for the game... He had borrowed a jumpy house for the kids from his pal... here is Tucker's best pal, Troy...

YEAH BRONCOS!! Everyone at their house was cheering for them! What a game!!!!!!
Lots of food and drinks, including beer and wine....

Jen made yummy cupcakes. A friend of theirs was celebrating his 50th birthday (on Super Bowl 50!) ...

All the food I took disappeared. Guess next year I'll have to make more! This little guy loved the taquitos. He had this one and it was still very warm. He blew through it and steam came out. It looked like he was smokin' a cigar!

I guesstimated there were 17 adults and just as many kids. All had a great time. The food also included chicken tenders, tater tots, meatballs, and ribs. Great job Jen and Brian!!!

Post game interview with Cam Newton, Panther's QB, showed what a bad sport he is! Good luck with that.

I got home about 8pm to a very happy Dude and Bruiser. "Where ya been so long, Mom?" LOL. Dinner time! Then I poured a wine, comfy chair, and TV. I watched the KOBI5 news I had recorded at 6pm and the weatherman, Matt, had put another of my photos on the news!!!!

The commercial California Avocado season is over.

So sorry your store put on display fruit not up to standard. brilliant save. When I have an important event off-season, I purchase guacamole premade for just that reason.

Shipments out of China will be significantly curtailed this week. One thing I've learned from my Chinese neighbors is patience. No need to rush what cannot be taken back.

"Famous"... not. Only here in the So. Oregon area. Lost of photos are on their news every week. Sunsets at the coast are a favorite or shots of the valley from high up!

My Daddy had a tree with lots of different types of avocados grafted to it. We had avocados year round. Sad growers aren't that forethinking! I will take the picture and show the store managers!xo

Great idea to show the store manager your pics of those ugly suckers. Yes, good save for the good ones. I bought mine for just here at home. Daryl is the one who makes the killer guacamole. I like a bit of fire in mine.

BEAUTIFUL layout of the food! As I keep saying, Jen sure knows how to throw a partaaaa! Love the "football field" lines on the drink table.It all made my mouth water this morning.

It's fun when everyone is rooting for the same team.

Having that same exact problem with avocados here in AZ, too. Costco, Trader Joe's, Fry's... Every time I buy them. Going to STOP!!!
