Good 38º pressure dropping cloudy morning. Rain predicted for this
afternoon/evening.
Yesterday pretty much stayed cloudy and gloomy most of the day. Warmed to a
whopping 37º by noon!
Then a little after 2pm we got some sun!!!
When I was at Tap Rock with Brian and family on Sunday, he gave me some
coffee beans from Intent Coffee Roasting. This is an interesting company. They
have been in business about 3 years. They invest 30% of their profits into
community development projects in the coffee growing regions they import their
coffee beans from... The coffee beans Brian gave me are from Nicaragua, and
roasted by Intent Roasting in Portland Oregon.

I really like this coffee. I like "stuff" in my coffee.. cream, something
sweet (usually like sugar free flavored syrups like DaVinci peanut butter,
chocolate, pumpkin, etc.) This Nicaragua Sweet Chocolate coffee is all natural
with no added flavors other than what is naturally in the coffee, and it was
AWESOME. I just added some creamer. When I run out I will order some from
Intent! Usually I have just one cup of coffee, but yesterday I had two! I wrote
some comments to Mark Johnson, the owner of Intent, and he kindly wrote back.

Yesterday, excitement was the key word... paid bills. Zowie. Wowie. Such
fun.
Ok, how about this for a potato side.... it's YUMMY!!!!
Baked Garlic Parmesan Potato Wedges
3 large russet potatoes, sliced into wedges
4 T olive oil
1/2 cup Parmesan cheese
Salt to taste
2 tsp Italian seasoning
2 tsp garlic powder
2 tsp paprika
Place potato wedges in a large bowl and drizzle with olive oil and toss to
coat. Sprinkle wedges with shredded cheese and toss again.
In a small bowl, mix rest of ingredients. Sprinkle seasonings on wedges,
and toss to coat.
Place wedges on baking sheet with skin side down and bake at 400º for 40
minutes, or until potatoes are fork tender and golden.
I like having some "dipping options" for the potatoes, like a small bowl of
ranch dressing, Sriracha mayonnaise, sour cream mixed with horseradish sauce and
some crumbled bacon, or smash an avocado and make a tangy guacamolé!

In case you didn't know, the US Congress repealed the labeling law. This
has been a fight with the meat industry for over 10 years. Now, because Canada
and Mexico were going to begin more than $1 billion in economic retaliation
against the United States. Lucky us, we will not know the country of origin of
packaged red meat.
I was being watched by Bruiser while at my computer...
Reruns for dinner (gotta clean out the fridge!) and chair, wine, TV.
Earlier I was looking for photos of my Alex.... she will be 20 years old
tomorrow! Anyway, I found a DVD that I had some old home movies put on. Started
watching it... Jerry and I camping at Wayside in September of 1993. OMG. Then
Andy and Linda's son Chris' wedding. Then we used to go to the beach house of
Dr. Mac with our pals Sid and Charline and Rico Suave and his Annette. So many
old wonderful memories! I just sat there for an hour. Such fun to see my Darling
and hear him and miss him. When Linda and I get together I'm taking the DVD so
she and Andy can see it.

National Whipped Cream Day
Yep, some goes in my coffee this morning!
Classic Whipped Cream Recipe
This is the classic recipe for whipped cream.
However, if your dessert is particularly sweet, such as pecan pie or chocolate mousse, you should
consider cutting the sugar in half or eliminating it completely. Very sweet
whipped cream on top of a sweet dessert doesn’t allow for counterpoint. While
everyone at THE NIBBLE has a sweettooth, we prefer a less sweet whipped cream (or even the slightly tart crème
fraîche). You can try reducing the sugar in all of the recipes that follow
on Page 2, as well.
- 1 cup of heavy cream
- 1 teaspoon of vanilla or almond extract
- 1 tablespoon confectioner’s sugar
- Pinch salt
Chill the bowl, beaters and cream thoroughly before
beginning. Using an electric mixer whip the cream, vanilla, and sugar in the
chilled bowl until soft peaks form. Makes about 2
cups

LOL I can't imagine having one cup of coffee in the mornings. I make a pot and by the end of the morning there is only a tiny bit left. I sure do enjoy it. I can't imagine people who drink nothing hot in the mornings.
I used to buy the vanilla creamer for my coffee but stopped doing that as I figured it added too many calories. I do buy it for special occasions, especially when a couple of my boys will be here and when I have bunco.
Bruiser is too funny. Such a cutie. My friend Felicia who tamed a feral tuxedo cat now has him in the house and acts much like Bruiser. Her German Shepard pretty much stays away from him. :)

The change in labeling law- for those who care about the origin of food more than a couple pennies per pound: one more reason to purchase meat from an old-fashioned butcher.
