Today is a special anniversary... my neighbors Frank & Cindy. It's 39
years! HAPPY ANNIVERSARY KIDS!!! They are off to the coast for some fresh crab. Crab Fest there this weekend.

Dinner... Sriracha Whole Roasted Cauliflower
Remove leaves and trim the base of the cauliflower.
Mix the following well, except for the Parmesan:
1/4 c olive oil
1 lemon, zested and juiced
1 T Sriracha sauce (or not if you don't like HOT)
1 T Sriracha mayonnaise (this would be better for tender tastes)
1 T cumin
1 T garlic powder
3 T Montreal Steak seasoning
1/4 cup grated Parmesan
Preheat oven to 400º. With a brush put the mixture all over the
cauliflower...or use your hands. Place on parchment paper or a sheet liner on a
cookie sheet or in a baking dish.
Roast until lightly browned and dry, about 30-40 minutes. Cool for 5-10
minutes. Slice into wedges and sprinkle on Parmesan. (I sprinkled on the Parm as
soon as it came out of the oven)
Next was Sea Scallops....
3 T olive oil
1 shallot, chopped
2 (14oz) cans artichoke quarters, drained
salt and pepper
1/4 c parsley leaves, chopped (I used dried)
2 T capers, drained
16 sea scallops
1/2 c dry vermouth (or use lemon juice and 3 pats of butter)
Heat large non-stick pan over med high heat, add a couple turns of olive
oil and the chopped shallots. Cook a minute or so, add artichoke hearts and toss
and heat. Season with salt and pepper and add parsley and capers. Transfer to
serving dish.
Wipe out pan and return to heat, raising heat a bit. Season drained
scallops with salt and pepper. Add 1 turn of olive oil to the hot pan and place
the scallops in the pan. Sear the scallops in a single layer, causing them to
caramelize.. 2 minutes each side. Add vermouth and cook out the alcohol .. 1-2
minutes. Arrange on top of artichokes and serve.
These scallops I have been making for years. A fav of both Jerry and me! I
like it better with the butter and lemon juice but either is GOOD!!! As for the
cauliflower... it was AMAZINGLY GOOD too. I will make it again for sure!!!!
Later a chat with several of my gal pals, chair, wine, and TV. Then I fell
asleep in my chair !!! Woke up and went to bed!
It has been said that
paper is obsolete.

Fritos Scoops my FAVORITE!!!

According to popular lore, Fritos hail from San
Antonio, Texas, where C. E. Doolin, who apparently had
an obsession with making a snack based on corn that would not go stale too
quickly, found a local man who had deep-fried corn snacks made from an extrusion
of masa. Doolin bought the man's patent and recipe, and with the help of his
mother perfected the recipe in his own kitchen (in much the same way that he
later invented Cheetos).[1] He began selling Fritos in 1932 under the
moniker of the Frito Corporation. Original Fritos ingredients were limited to
whole corn, corn oil, and salt.
From 1952–67, the Frito Kid was the company's official mascot.[2] The Frito
Bandito was its
mascot from 1967 until about 1971, and was discontinued due to complaints about
the Bandito image. He was initially replaced by the Muncha Bunch, a group of
cowboys, which then were replaced by W.C. Fritos, modeled after comedian W.C.
Fields.
National Corn Chip Day celebrates the Corn Chip. Fifty years ago, few
Americans knew what Corn Chips were. Today, most American can not imagine life
without this tasty, crunchy holder of salsa, cheese and (mostly) mexican dips.
Its even sprinkled atop salads, making salads even more crunchy.
On National Corn Chip Day, enjoy eating one of your favorite snacks. And,
take our Corn Chip challenge....eat corn chips for breakfast, lunch, dinner and
snacks today! I don't know about you. But, I will find that easy to do.

A woman in the salon yesterday was describing how she made oven-fried chicken breasts- subbing crushed Doritos for corn flakes in an old recipe.
The cauliflower looks good. But dangerous....
I imagine Claudine Longet had it with publicity by the end of her trial. Wouldn't it be nice if more celebrities (and politicians) who found themselves in trouble follow her example. Let the rest of us move on.
Not only were the Sellecks the nicest family- they still are. They may be famous, but their focus is on being good to others.
I am sure your daughter in law tells some great stories about her clients, including the Sellecks. I will be a fan of his forever! xo
