Good 43º clear morning.
 
Here is some GOOD NEWS.... my Kristen is officially cancer free!! Her recent scan showed NO CANCER!!! Praise God. Thank you all for your wishes, donations, and prayers. HE listened!
A couple photos of Kristen at Coolidge School where she is the Office Manager... and the teachers and staff....

Breakfast was 2 eggs mixed with chives and mini diced tomato and Mexican blend cheese atop baby spinach with more tomatoes and some of 7 Oaks Sweet Onion Ranch, a rice cake with Costco's guacamolé. OMGOOOOOOD!!!!!

For you Oregonads, 7 Oaks Farm is in Central Point. The will close after Halloween.

 

My friend Ann Ramirez (LASD ret) and her hubby Gabe (LASD ret) saw this guy in their tree. He sat there she said, for 10-15 minutes and let Gabe get his picture...

Yesterday Nancy and I met in town and we went first to Brian's office to drop some things off and he had a gift certificate to Climate City Brewery, so he gave it to us since I told him that was where we were going... HOW NICE!

Back door:

There are hops growing on a vine along the back parking lot. Didn't know what they were at first.. had to ask. Apparently this is the best climate for growing hops.

We sat out on the patio. It was sooooo nice. Not hot, just perfect.


We each had some of their new pumpkin ale ...

I'm not a beer drinker, but this was good!
Nancy had the Chinook Pub Pretzels... baked jumbo sea salt pretzels served with a whole grain mustard-cheese sauce.
THESE are GOOD!

I had the Black and Blue Nachos ... seasoned homemade potato chips topped with blackened beef tenderloin, peppered bacon, caramelized onion-poblano cream sauce, blue cheese, scallions, jack cheese, and fried onions.........
OMGOOOOD! But too much for just me to eat. They serve large portions there. I brought most of mine home. Nancy too! LOL, and these items are listed under "Small Plates". Hmmmmm... let's see... future breakfast lunch and dinner! For you fellas who like man-sized portions, this is the place for you!
 

Later I ran a few errands in Rogue River... Ace for deer blocks, pharmacy for prescription, and something else I forgot!

Caramel Custard Day

 
Ingredients
  • 1-1/2 cups sugar, divided
  • 6 eggs
  • 3 cups milk
  • 2 teaspoons vanilla extract

Directions

  • 1. In a large heavy saucepan, cook and stir 3/4 cup sugar over low heat until sugar is melted and golden. Pour into eight 6-oz. custard cups, tilting to coat bottom of cup; let stand for 10 minutes.
  • 2. In a large bowl, beat the eggs, milk, vanilla and remaining sugar until combined but not foamy. Pour over caramelized sugar.
  • 3. Place the cups in two 8-in. square baking pans. Pour boiling water in pans to a depth of 1 in. Bake at 350° for 40-45 minutes or until a knife inserted near center comes out clean. Remove from pans to cool on wire racks.
  • 4. To unmold, run a knife around rim of cup and invert onto dessert place. Serve warm or chilled. Yield: 8 servings.

PRAISE BE TO GOD!!! How wonderful! So happy for Kristin! I love the celebration the school made for her. It is obvious they love her! What great news!!

You all do find the neatest eating places! Your meal looked so unusual and yummy. Love to have leftovers! I have shrimp scampi with angel hair pasta for my breakfast. Leftovers from Coco's last night! :)

Oh I do remember that infamous morning when the murderer got a not-guilty verdict. We were so upset. I told some of the teachers who came into my kitchen at school that day "Vengeance is mine sayth the Lord". Well, it came to pass and look where he's rotting today! Good!

Praise be to God and all who helped Him make Kristen well. Your happiness shows in all you posted- even the sad news from the Oregon college. We can never make what happened right- but when all we can do is show love through support in tough times- that counts.

The Rogue River area is lucky to have you share what a wonderful place it is.
