Good 56º sunny wispy cloudy morning.
Yesterday by 1pm it was only 78º. Cloud cover stayed. Nice for a change!!!
Then by 2pm it was 83º and smokey! UGH. I think we topped out around 89º and
windy smokey!

Yesterday I decided to work on some kitchen projects. I needed to infuse
some olive oil. I use the Costco olive oil, dried garlic, dried onion, and
crushed red pepper flakes.
I like to keep it in old wine bottles and put a pourer on the one I'm using
at the time, for convienence.
For the three bottles, each holds 32oz. I forget though and should add a
bit more of the olive oil, as the garlic/onion/pepper flakes soak up some.
Anyway, 1 cup each of the garlic and onion, and 1/3 cup of the pepper
flakes.
Heat the oil to 175º
Once hot, take off the stove and add in the dried ingredients. Let sit,
stirring occasionally, until completely cooled..
Next strain the flavorings from the oil and put into bottles...
I save the garlic/onion/pepper flakes in a zip bag and freeze them to use
later in soups and/or stews. Being of Scottish heritage I can't waste
anything!!!
Out back today was a few turkey hens and their baby chicks. First time this
year I have seen them on the property! Chicks are getting big!

In the afternoon AJ from All Natural Pest Control came by to re-bait for
the ground squirrels. He has just about gotten rid of them all! Best job
ever!!!
He baited all the spots he did previously and even found a few ground
squirrel holes in the pasture!
AJ is GREAT! He is so nice. Showed me pictures of
his new baby girl. He and his bride also has a son a few years old.
I also decided to make some cucumber soup..
1 pound cucs, ½ t. salt, 1½ cups fat free plain yogurt, 1 green onion
chopped, 1 garlic clove minced, 4½ t. snipped fresh dill....
Peel and remove seeds and slice cucs. Use a spoon to scrape out the
seeds... BTW that old peeler there was my Mom's.
Toss the cucs with the salt, put in a collander to drain the liquid for 30
minutes. Then squeese out the rest of the liquid and pat dry....
I didn't have fresh dill, only parsley, some green onions, didn't have
fresh garlic so used the kind in a jar, and only had 1 cup of yogurt (ate some
for breakfast!) so used that and ½ cup sour cream. So, everything goes into the
"food processor" and run til smooth. Oh, and I had a little dried dill so added
in about 1 t.
Then joy of all joys, my food processor is on the blink and so is my
juicer! Grrrrrr.... So did in small batches in my Magic Bullet!
The for dinner I mixed some dressing... 1 oz olive oil (this is O Olive oil
w/ Tihitian limes - http://www.ooliveoil.com/ ) and 1/2 oz of
some O Olive Oil Citrus Champagne vinegar, and a good squeeze of the creamy
garlic sauce!
I mixed it in with some of the left over veggie/clam salad (on blog 8-11)
and then folded it into some lettuce leaves... lettuce wraps!
Along with I had a cup of the cold cucumber soup...
OMGOSH, that soup is AWESOME. Going to make it again and again!!! Nothing better on a hot day~! Thanks
Dave Clark (LASD ret) for the inspiration! Actually it was his wife Pam!
Had a call from Linda and Andy as they went by our RR off ramp on their way
to Washington. Honk and wave! Beep beep hi! This was a quick trip to get his
mom's house ready to sell. They will honk and wave on their way back down
Friday.
Woke in the middle of the night about 2am and looked out to see the meteor
shower, but still too many clouds overhead. Dang!
All I know. Nuff said. Happy Hump Day. Ciao.

Well I do believe I gained some weight just reading today's blog! LOL Now you made me want some In n Out!
My goodness you were busy in the kitchen yesterday! Your lettuce wraps reminded me of one of my fave lunches. I slather lettuce leaves with mustard then slap on some deli turkey slices and put a moz. cheese stick in the middle and wrap it up. So good and low calorie.
We have a guy too who comes out every two months to kill the gophers. We call him our gopher guy. It's a must, living where we live next to the wilderness.

LOL, I certainly can't wait for In-N-Out to open. You know they even have a lettuce wrapped burger. No bun. Yummmmy too! Your lettuce wrap sounds good! xo
Yes, I know about the lettuce wrap burger at In n Out. They are called Protein Burgers. YUK! A friend of mine years ago was with me and she was on a Dr. Atkins diet and ordered that. No fries of course. Well, I just wouldn't go to In n Out if I couldn't have the real thing!

In I Out burger plain our dog's favorite treat. I didn't like there fries until we learned to order well done.
