JoCo Fair ~ Egg-Tastic ~ Clean A Microwave ~ Jackson ~ Eagle vs Drone ~ Charline Aubin ~ Cuisinart ~ Homemade Lemonade


Good 54º clear sunny morning. Not as much smoke yesterday. At 4pm we were at 102º. UGH. And naturally with all this heat and smoke the Josephine County Fair started yesterday.

This year they have sea lions doing tricks at the fair.

Breakfast...
I recently ordered and received an Egg-Tastic....
I put two eggs in the Egg-Tastic, mixed them with a fork, added in a couple pinches of bacon crumbles and some mozzarella cheese. Put in microwave for 1:10 min. You can cook 1-4 eggs at a time.

They come out fluffy and GOOD and SO FAST AND EASY!!!
Cooking just 1 egg at a time and putting it on a piece of toast or a rice cake or cook 2 and wrap in a tortilla or spinach wrap! And, this little guy goes in the dishwasher! LOVE it!

Speaking of microwaves... here are 3 methods for cleaning yours...
1. Place 2 cups of water in a bowl and add 2 T. baking soda. Pot in the microwave and cook on high about 90 seconds. Any dried food will wipe off with a damp cloth.
2. Make a mixture that is 50% vinegar and 50% water. Heat in micro until it boils. The steam in the micro will loosen the dried on food and a sponge dipped in the mixture will rub off the remainder.
3. (this one is my fav) Place a tablespoon of lemon juice in a mug and top it up with water. Heat until boiling in micro and let sit there for 10 minutes. Gunge will wipe awayt fast the microwave will smell fantastic!

Yesterday, Jim Stewart, the pest control guy was here. He's going to renew my contract and said if I sell this place before the contract is up, it will continue over with the new owners. This is for ground squirrels, the little destructive poops! Here's one up on the tree stump in the upper pasture.

Sixteen years ago today my awesome friend Charline Aubin passed away. She was only 61. She and I used to make pomegranate wine. She was a Level II Reserve. She worked at the BC Range in the booth. We, Jerry and I, Charline & Sid (our BC SR Capt), Rico Suave & Annette would all join Dr. Mac at his beach house for weekends of cooking and eating. She was a GREAT gal and friend. Missed very much!

Yesterday the UPS guy arrived with my new Cuisinart. YEAH! Now I can get back to pureéing in a bigger machine than my Bullet!
I like red appliances but  they only had white. Oh well. And I was encouraged to purchase locally, but Amazon had it $30 cheaper. Sorry.
Dinner was reruns of the eggplant, corn on the cob with creamy garlic sauce, and some of Jennifer's awesome beans with artichoke hearts. OMGOOOOOD!!!!


After dinner it was a Hallmark movie, My Boyfriend's Dogs..

Didn't see the buck or the fawns yesterday,  but momma doe was out in the back laying in the shade..
I'm sure she was taking a break from nursing 3 fawns!!!

Lemonade Day

When life gives you lemons, make lemonade!
Why purchase bottled lemonade or mixes, when it’s so easy to make better-tasting homemade lemonade from fresh-squeezed lemons? The difference is night and day.
This recipe makes fifteen 8-ounce glasses of fresh lemonade. You can adjust the sweetening to your own taste.


  • For a zero-calorie drink, use non-caloric sweetener.
  • For a low-glycemic drink, use agave nectar.
  • You can also use this recipe to make fresh limeade.
  • And varying the garnishes makes the recipe “new” each time.
  • A shot of vodka or gin turns lemonade into a splendid cocktail.
  • 1.5 cups fresh-squeezed lemon juice (about 6 large lemons at room temperature)
  • 6 cups cold water
  • 1 cup of table sugar or equivalent (agave, honey, non-caloric sweetener, simple syrup)
  • Ice
  • Garnish: berries, cherries, lemon wheel, mint leaves, watermelon cubes
  • Optional: straws

    Preparation
    1. Roll lemons on the counter before squeezing, to maximize the juice output.
    2. Combine water, juice and the three-quarters of the sweetener in a pitcher and mix thoroughly. Taste and adjust sweetness bit by bit. The objective is to keep the lemon flavor first and foremost and not make sugar the first thing you taste. It’s better to under-sweeten than over-sweeten: People can always add more sweetener to suit their individual taste.
    3. Regular table sugar doesn’t dissolve easily in cold water. A better solution is superfine sugar or simple syrup (easy to make).
    4. Add ice to glasses and fill with lemonade and garnish. Ideally, chill the lemonade prior to serving so it will be cold and require less ice (or no ice), which dilutes the flavor. You can also use one of our favorite tips: make lemonade ice cubes.
    5. To garnish: Slice an extra lemon into wheels and cut notches so they sit on rim of glasses. You can also notch watermelon cubes. Or, fit a straw through the larger fruit such as watermelon and strawberries).

    That Hallmark movie sounds so good and cute. I love their movies, especially the Christmas ones.

    I cook eggs all the time in the microwave. I just put a couple in a little glass bowl and microwave for 30 seconds, stir then cook a bit more. They turn out like the ones on your plate and oh so easy. I do have to soak the bowl tho. (I always add a tad of milk to my eggs and of course salt and pepper before cooking.)

    Jack is a darling and was when he was little too. Is he going to be a junior or senior this year? I am assuming he's still in the drum line in the band. Does he have to beat the girls off with a drum stick? :)

    Amazing video of the eagle and the drone. Glad he was ok after that. What were the odds? Maybe he was drawn to it thinking it was another bird.

    I've cooked eggs in the microwave too, but this Egg-Tastic beats all the other ways.

    Yes, Jack is 16 and a junior this year. Still the Gene Krupa of the band! xo

    When Gerry flew his quad copter at the park- the hummingbirds would attack. Then there was the yellow lab who decided it looked like a duck landing.... fetch.

    I have some lemonade ice cubes in the freezer- think I'll thaw a couple.
